Selenium is the essential trace elements for our human body, lots of diseases are relevant to low selenium, such as Keshan disease, Kaschin-Beck disease and Angiocardiopathy. Selenium supplement cannot only prevent these diseases, but also can enhance human immunity. However, China is indeed lack of selenium, forming a chain short of selenium from plants to animals and even human, which has been a threat to the health of the human beings. It’s particularly important to develop selenium-rich food. Camellia oleifera is the major woody oil plant in China, and Camellia oil is a kind of ideal edible oil which can prevent and treat the cardiovascular disease, improve immunity and so on. However, the distribution of Camellia oleifera is in the southern areas of China, where the soil is lack of selenium. Therefore, if we can put selenium into Camellia Oil successfully, the efficiency and quality of Camellia Oil will be improved, it also can promote human health.Based on the preliminary studies, fertilizer calibration experiment of Camellia Oleifera seeds and Camellia Oils were offered and compared to the ordinary and selenium-rich Camellia Oils. In this paper, It was analyzed the basic components of different se-rich Camellia Oleifera seeds, the quality characteristics of se-rich Camellia Oils and their antioxidant function characteristics. Then, it was discussed the relationship between the content of selenium and various properties of Camellia Oils. The main results were as follows:1. At present, selenium-rich technology can effectively improve the content of selenium in Camellia Oleifera seeds, and the highest content was0.517mg/kg. Meanwhile, with the increase of selenium, the content of ash and protein increased, and content of protein was up to8.070%. However, other components weren’t affected by selenium.2. The content of selenium in Camellia Oil was improved effectively with selenium-rich technology, the highest content was0.037mg/kg. The content of selenium in Camellia Oil has a slightly effect on sensory characteristics. In addition to acid value and peroxide value, selenium didn’t affect the physical and chemical indexes of Camellia Oil. With the increase of selenium, the peroxide value was reduced from6.37meq/kg to3.03meq/kg, and acid value was reduced from2.753mg/g to0.119mg/g.3. The quality characteristics and functional changed when the contents of selenium in Camellia Oils were different. With the increasing of selenium, linoleic acid, linolenic acid increased significantly, up to33.9637%and2.6934%; while the content of oleic acid was reduced to49.5983%. Sterols also increased, content of sitosterol and stigmasterol were both higher, up to80.68mg/100g and21.03mg/100g. squalene would increase in low selenium level, and assumed the drop tendency in high selenium level, the range was from4.63mg/100g to24.48mg/100g. However, content of a-tocopherol didn’t have obvious correlation. The results suggested that content of selenium would have influence on the quality and fuctional characteristics of Camellia Oil. Components of poyphenols wasn’t affected by selenium. When contents of selenium increase,3,4-Dihydroxyphenylacetic acid and quercetin had an upward tendency.4. The selenium content of Camellia Oil can affect its antioxidant features. With the content of selenium increasing, peroxide value and acid value were reduced, conjugated diene value decreased, and then automatic oxidation speed was slower. The increase of selenium can improve the ability of scavenging free radicals of Camellia Oil, as well as increase the content of phenolics in Camellia Oil.At this stage, selenium-rich technology had been able to get close to the standard of Se-riched Camellia Oil, The quality and antioxidant function characteristics of Se-riched Camellia Oil were also improved. In future, we can explore the method of combination soil fertilizer with foliage dressing fertilization, so that we can get high quality Camellia Oil.
