Navel orange is one of the efficient economic fruit widely cultivated in gannan, withhigh output. The main variety of navel orange is New hallnavel orange, harvest in lateNovember. Relevant reports shows that an average deterioration of fruit reach25%~30%inour country, causing economic losses of more than100billion yuan per year, and the lost isgenerally less than5%per years in developed countries. Adopting appropriate fresh-keepingtechnology can keep the fruit flavor quality, also can reduce the loss and adjusting the supplymarket. At present, the navel orange fresh-keeping technology is very traditional andweakness ones.This study concentrate to develop a new green fresh-keeping agent and preservationtechnology which is accessible, easy preparation, low cost, simple operation, and effective, toimprove the navel orange during storage. This technology would increase the economicbenefit and social benefit of great significance.The chitosan was obtained through chemical modification of water solublecarboxymethyl chitosan. The effect of carboxymethyl chitosan coating on fresh-keeping ofGannan navel orange effect and mechanism of preservation. The result show that:1.5%carboxymethyl chitosan and its complex blend of fresh liquid, which can effectively carry outfresh orange heap. Carboxymethyl chitosan molecules due to the base’s role, to effectivelyinhibit invasion of pathogens, good into the mold and its effect on fruit enzyme induction,inhibition of the navel orange respiration, increased SOD activity, so as to achievepreservation.
