Canola flower powder is rich in nutrients. Studies have shown that canola flower powder with the activities of decreasing blood fatty acid, tumor resisting and anti-oxidation.At present, the main studies of antioxidant peptide mainly focus on animal protein and plant protein polypeptide. After acid hydrolysis or enzymatic hydrolysis, the proteins can be divided into a number of antioxidant peptides. The enzymatic reaction has on a mild condition, easy to control, specificity, fewer byproducts, etc., so we believe that by the polypeptide who obtained by enzymatic way is better[24]. Studies have shown that certain proteins as a substrate under suitable conditions for enzymatic decomposition produces some small molecule antioxidant peptides. These peptides have small molecular weight. They are easy to be digest and absorb, safety, reliable, without allergic reactions, have better exploitation.This paper have studied the optimal hydrolysis conditions of canola flower powder, and explores the antioxidant activity of canola flower powder hydrolysates.Optimal hydrolysis conditions papain is on pH = 6,60 ℃; On this condition hydrolyzate DPPH clearance rate was 83.35%, increased 5.08 times relative to a blank sample; hydroxyl radical scavenging rate was 69.12%, an increase compared to the blank sample 2.24 times; superoxide anion radical scavenging rate was 51.44%, increased 2.14 times relative to a blank sample.Optimal conditions for cellulase enzyme is pH = 6,50 ℃; On this condition hydrolyzate DPPH clearance rate was 27.64%, increased 1.68 times relative to a blank sample; hydroxyl radical scavenging rate was 73.52%, compared to the blank sample increased 2.38 times; superoxide anion radical scavenging rate was 29.04%, increased 1.21 times relative to a blank sample.Pectinase optimum hydrolysis conditions for p H = 3.5,50 ℃; On this condition hydrolyzate DPPH clearance rate was 73.13%, increased 4.46 times relative to a blank sample; hydroxyl radical scavenging rate was 89.71%, compared to the blank sample increased 2.91 times; superoxide anion radical scavenging rate was 51.44%, increased 2.14 times relative to a blank sample.This article not only can learn from the process conditions for the future canola flower powder enzyme production, but also for future further research canola flower powder oxidation resistance and lay a solid foundation.
