| Background and ObjectivesHazard analysis and Critical Control Point (HACCP) is widely used in food industry in recent years. HACCP is an effective method which can decrease or even avoid food hazard through key procedure controlling and monitoring. Accordingly, it can be applied in drinking water industry as well. In Yueqing, bottled drinking water industry is developing dramatically, but lacking safety control in water process is still an existing problem.In this thesis, HACCP system of bottled drinking water was established to strengthen the safety control in water process and to improve the sanitary quality of bottled drinking water.MethodsA bottled drinking water manufacture which qualifies to GB19304—2003 《Hygienic specifications of factory for packing drinking water》 was selected in this study. The HACCP system for manufacturingof bottled drinking water was established by referencing to the principles and procedures of HACCP system and guidelines recommended by CAC;collecting and monitoring raw material, semi-manufactured water, packing material and manufacturing environments for hazard analysis and critical control points. The indexes of critical control points for bottled drinking water before and after the HACCP management were sampled, detected and compared.ResultsOzone sterilization, clean in place (CIP), bottles and lids disinfections, manufacturing environments were selected as the critical control points in production. The indexes of bottled drinking water before and after the HACCP management showed significant difference (P< 0.01). The sanitary quality of all the bottled drinking water after HACCP management fully conforms to the national standard.ConclusionsHACCP management has been proven to be the most effective method to improve sanitary quality of bottled drinking water. The HACCP system established in this study provides a good reference to all bottled water manufacturing. |
