The so-called export small foodstuff is charactered with many species and a little quantity which is relative to staple export foodstuff, many of them belong to deeply processed food . the export amount is not large, and relatively goods value is high, what more important is that foreign countries have no standards, all that our factories do is in light of clients' request. because of the lack of distinct standard, the inspecting result is blur in whether or not up to grade .These years, with the increasing of international trades, Chinese products are more and more nervously asked, because of not having matured experiments like fishery or can-food to refer to ,the export small foodstuff was often found additive by foreign country. This research quote HACCP analysis theory, by analying and making a research of whole chain from buying raw material to packing products, find out key hazard ,to make fine product,we can control key hazard and strictly execute the quantity inspecting progress. I wish this research can be help to food factory and entryexit inspection and quarantine bureau of China.
