Biomimetic Electronic tongue is a kind of intelligent electronic equipment which can simulate human tongue to analyze general information of various liquid media and identify their tastes. It shows the features of fast detection, real-time operation, on-line inspection and safety. Electronic tongue was developed in the mid-eighties of the twentieth century. It is demonstrated that such novel systems were capable of performing qualitative analysis as well as recognition, process monitoring and taste assessment of various foodstuffs. It is of obvious and practical significance to develop a reconfigurable and customized electronic tongue to satisfy different requirements.The main research work and results are as follows.Theoretically, traditional electronic tongue sensor and detection methods were introduced in this paper. Furthermore, especially the ion-selective electrodes array and electrochemical voltage theory were described. Sensors array is made up of ion-selective electrodes and reference electrode. The main function of electrodes is responsible for liquid samples. Theory and Technology of sensor array selection were also described in details.On system designing, an intelligent biomimetic tongue was designed based on ISE (Ion Selective Electrode), improving system in models of data acquisition (DAQ) and signal conditioning. It features excellent convenience, anti-electromagnetic interference and practicability by using an USB (Universal Serial Bus) DAQ card.On sensor array optimizing, feature selection and combinatorial optimization were studied in details. New intelligent genetic algorithm combined with PCA (Principle Component Analysis) and ICA (Independent Component Analysis) was applied to the feature extraction of sample signals. Testing and training data library was built. Finally, pattern recognition technologies including ANN (Artificial Neural Network), GA and improving algorithms were employed to the recognition and classification.Finally, a special electronic tongue evaluation system was proposed in this paper. Its evaluation parameters were composed of not only training time, recognition time and error accuracy, but also CPU memory capacity and algorithm stability.In conclusion, a biomimetic electronic tongue based on virtual instrument development tools was constructed successfully, and a evaluation system was built which can obviously compare different recognition methods. It was demonstrated that the system has improved the performance of electronic tongue, providing good basis for further application study.
