Research background:Antarctic krill lipids is riched in Omega-3 series of unsaturated fatty acids, phospholipids, flavonoids, vitamin A, vitamin E,and astaxanthin. The Omega-3 series of polyunsaturated fatty acids(PUFAs) content is richer, especially eicosapentaenoic acid(EPA, 20:5), docosahexaenoic acid(DHA, 22:6) accounted for the total fatty acid content 15.0 %-25.3 %, 9.3 %-21.2 %, EPA and DHA play a special role on human health, it can prevent cardiovascular diseases, inflammation, cancer, dementia, and diabetes, decrease visual acuity of various diseases also. Studies have shown that Antarctic krill lipids of Omega-3 polyunsaturated fatty acids mainly exists in the phospholipid, so compared with fish oil and other traditional EPA and DHA supplements, phospholipid EPA and DHA has a better absorption and higher nutritional value.Nowadays, raw material of domestic and foreign large-scale production of lecithin is the main from the soybean and egg yolk, and Antarctic krill oil as high EPA/DHA content source of phospholipids in industrialization haven’t been gotten powerful development. Therefore, the development and utilization of phospholipids in the Antarctic krill oil is of great significance.Object:(1) Antarctic krill oil phospholipids in preliminary separation process and purification of research, laying the foundation for its development and utilization;(2) Ginsenosides complexes were prepared by using the Antarctic krill source of phospholipids, find the best preparation process, laying the foundation for the industrialized production;(3) Antarctic krill oil microcapsules preparation method has been investigated, in order to provide theoretical guidance of krill oil storage.Results: 1. The establishment of the initial concentration of phospholipids in the Antarctic krill oil separation and purification method, and analyzed for their fatty acid composition. The results showed that the Antarctic krill phospholipids riched in EPA and DHA, respectively, accounting for the total fatty acid content 22.10 % and 10.42 %, nutritional value is high.2. To optimize the preparation process of the composite by using response surface methodology. Finally get the Antarctic krill source of phospholipids of ginsenoside complexprocess conditions: reaction time 1.5 h; ratio 1:1.6; saponin concentration was 35 mg·m L-1, three times validation experiments showed that the average complex-rate was 97.45 %. Relative error between the actual value and predictive value was 0.64 %.3.To optimize the preparation process of Antarctic krill oil microcapsule. We can obtain optimal condition of preparation of the Antarctic Krill Oil Microencapsulation through orthogonal test: Sodium alginate solution concentration 1 %, Chitosan solution concentration 0.5 %, Ca Cl2 solution 3 %, oil/material ratio 1:1,under this condition, the Antarctic krill oil encapsulation rate is 86.45 %.Conclusion:(1) Using self-made Antarctic krill oil as the research object, the separation and preparation of phospholipid by using liquid-liquid extraction method, under the optimal extraction conditions, the phospholipid content of product is up to 86.46%, the method does not cause waste of lipid and solvent recovery, green environmental friendly, for the Antarctic krill lecithin industrialization production laid the foundation. And the products of fatty acid analysis by GC/MS result showed that EPA/DHA is accounted for 32.52% of the total fatty acid content, Antarctic krill phospholipid polyunsaturated rich fatty acid content, high nutritional value.(2) Research the preparation of ginsenoside complex with self-made Antarctic krill source of phospholipids as raw material, preparation technology was optimized by response surface method, under the optimal conditions, the complex rate of product is up to 97.45%. The product of microscopic particles have good morphology, structural integrity, and provides direction for the application of Antarctic krill phospholipids.(3) Using self-made Antarctic krill oil as the research object, sodium alginate / chitosan as wall material system by orifice method, orthogonal optimization of microcapsule preparation technology, under the optimal conditions, microcapsule encapsulation efficiency up to 86.45%. Antarctic krill oil microencapsulation, not only have usage convenience but also the excellent antioxidant characteristics, and explores the new application field for Antarctic krill oil.
