HACCP (i.e. Hazard Analysis Critical Control Point), a system to define, assess and control the important hazards of food products, is regarded as the most advanced management system for food safety by international authoritative organizations and the food inspection sectors of many other countries. Based on the theories and methods of food techniques, microbiology, chemistry and physical, quality control and hazard assessment, we can find out the key links directly relating to the safeties of the end food by analyzing the existing and potential hazards throughout the process of manufacturing and end consumption. Therefore, we can correspondingly take some control actions to minimize the food hazards. HACCP is not only a significant measure in ensuring the safety of food and the health of consumers but also a kind of important non-tariff barrier being widely used in international food trades.With a rapid development of the food industry of China, the quality of food products is also significantly improved. However, there is still a big gap in controlling the sanitary quality of food products in comparison to that of developed countries. The various problems emerging from the sanitary quality of food products badly affect the health of consumers, and at the same time, they get in the way of the food products of China to enter international market. Furthermore, the developed countries are increasingly raising the inspection standards, expanding the scope of inspection indicators and getting authenticating system stricter, forming a serious technical trade barrier against the food products export of China. A set of management and controller systems, which are effective, scientific and advanced, are absolutely necessary to change this condition. As one of the most advanced system for food safety management, HACCP can be applied in China to sufficiently ensure the safety of food products, and on the other hand, it is also a "Passport" for China to further expand the export of food products and enter overseas market.The application of HACCP system in China is reviewed in this thesis. Due to the limitations of economy development and traditional management modes, there are a variety of problems and limitations in the implementation of HACCP system in China. After discussions on above problems, this thesis gives some suggestions on how to improve the legislative and administrative mechanisms, provide financing support, reform the systems of inspection and quarantine, select the appropriate HACCP mode conforming to China's actual conditions. These suggestions should be implemented through the cooperation and association of the Government, enterprises and entrepreneurs of China. I'm sure that the export of food products of China will break the present technical trade barrier with the development and improvement of HACCP system in food industry of China.
