In the paper, effect of egg white peptide on memory and nerve excitement was studied.There was six aspects of work in the paper,and the conclusions are listed below.1 In the evaluation method experiment of improving memory, it was found: In use of Channel-type water maze to evaluate memory of mice given egg white peptides,it found that the farthest blind side can effectively avoid event factors on experimental results influence.Shuttle box experimental shock times had better not exceed 10 times.In Avoid dark experiments,the experimental environment is hard,and it was a good way to avoiding experimental error that selecting the previous three experimental data statistics.2 In the preliminary studies on memory in mice given egg white peptides,it was found that:(1)Egg white oligopeptide with concentration of 4.5(mg/g·bw·d) and 13.5(mg/g·bw·d) had significant influence on mice memory of mice.(2)According to the study of egg white with different enzyme solution time, it could be found that when time was two hours ,the egg white showed significant effect on memory of mice,whereas when the time was four hours, egg white peptides had no significant effect on memory of mice,although it could shorten the the incubation.(3) Based on autonomic activities case test and hole results, egg white with different hydrolysis time and egg white oligopeptides with different concentrations had no significant effect on the spontaneous activity of mice.3 The research of the best time and doses of egg white peptides improving memory of mice,it was found that:(1) In the 180-day old rats behavioral experiments,mice fed with doeses of 4.54.5(mg/g·bw·d) and 9(mg/g·bw·d) egg white oligopeptides, the number of activities of which was higher than other groups, indicating that hydrolysis of peptide egg have a certain nerve excitability influence.(2) In the water maze and shuttle box test,4.5(mg/g·bw·d) and 9 (mg/g·bw·d) group was superior to other experimental groups (p<0.05). And on 72th day in the water maze,the incubation was shortest,4.5(mg/g·bw·d) and 9 (mg/g·bw·d) concentration of egg white high F value of oligopeptide can significantly improve memory function in mice. And in the first 72 days effect was the most significant. 4 In the study of production performance of mice given egg white peptide ,it was found:(1) Different doses of egg white protein peptides and different peptide hydrolysis time of egg white protein can increase the Na+K+-ATPase activity; 0.9 (mg / g·bw·d), 4.5 (mg / g·bw·d), 13.5 (mg / g·bw·d), 18 (mg / g·bw·d), 22.5 (mg / g·bw·d) of the egg white protein peptide AChE can reduce the vitality of the brain in mice.(2) Egg white protein peptide can reduce the 90d and 180d mice increased daily feed intake and feed gain ratio 180d mice.(3) The coefficient of mouse organs, whether in mice or in the subjects 90d 180d, egg white protein hydrolysates with different concentrations of egg white high F value of the oligopeptide organ coefficient in mice showed a significant impact diet of mice.
