Anthocyanins are important natural food pigments. This paper used pigments extracted from fruits of Nitraria tangutorun Bobr. as material, determined the content of rough compon -ent and mineral elements, also refined and purified pigments with X-5 macroporous resin, the anthocyanins were carried out and their structures were elucidated. At the same time, the experiment was studied about free radical scavenging effects and serum lipid-lowering and antioxidation of anthocyanins. The chief experiment results were as follows:1,The contents of total sugar, cursory protein and total amino acid were high, studies indicated the food natural pigments had better nutritional quality and would have broad application foreground in developing healthcare leechdom. Although cursory fats was little, they existed as unsaturated fatty acid and reduced contents of triglyceride and cholesterol, the result provided the theoretical foundation of new drugs.2,The pigment contained abundant mineral elements, especially K, Na macro-element -s, the fact was related ecosyst-characteric. The sibirica was not only tolerant salt and alkali and improved physical and chemical structure of soil around. We guessed it reformed soil through salt accumulation and metabolization. Non-essential trace elements were under healthful criterion of cold-drink food, indicated the food pigments were safe and nutritious.3,Through the average E of the individual anthocyanin derivate and the calculation formula, the content of anthocyanins from fruits of Nitraria tangutorum Bobr. was obtained. It is (4.11±0.58)%.4,By TLC analysis, at least five derivates were existed in the anthocyanins of Nitraria tangutorum Bobr. fruit. Through consulting Rf value correlative literature, the derivates were Pelargonidin, Delphinidin, Cyanidin, Malvidin and Peonidin, primitively.5,Free radical scavenging effects of anthocyanins showed that the anthocyanins possessed remarkable scavenging effects against O2-·,·OH and DPPH·in a dose dependent manner. The scavenging capacities of anthocyanins for·OH and DPPH·were comparable to those of Vitamin C. It was a good natural free radical scavenger.6,It showed that the anthocyanins at the dose of 2.1g/kg.bw and 1.05g/kg.bw not only had significant inhibition effects on TC and TG level but also increased the ratio of HDL/TC and HDL/LDL, and SOD activity, and decreased the MDA content significantly in serum of the hyperlipermia model of Wistar rat. The anthocyanns from fruits of Nitraria tangutorm Bobr. has better decreasing blood lipid and anti-oxidative effect, and could prevent and cure atherosclerosis.
