With the redressal of agricultural configuration and the development of beneficial agriculture, enlarging the planting of famous, characteristic, eximious crops and making use of them is the new trend of agricultural development in our country currently.As a good and eximious crops resource, black cereal and oil crops are important source for the development of natural antioxidants due to rich nature anthocyanins in seed coats of black cereal and oil crops and have good pigmentation and physiologic function in antioxidation.In this paper, the difference among total anthocyanins , total phenolic compounds and antioxidant activities of different black corn was analyzed, comparason on in vitro free radical scavenging effect and other antioxidation effect and the effects of external factors on the antioxidant stability of anthocyanin extracts in seed coats of three black cereal and oil crops,the physical and chymic speciality and componential difference was analyzed, the results showed as follow:(1)Analyze the total antioxidant capacities (TAC), oxygen radical absorbence capacity(ORAC) , the total anthocyanin contents and the total phenolic compound of 108 shares black rice,30 shares black soybean and 10 shares black corn, found that the difference among TAC ,ORAC,total anthocyanins and total phenolic compounds of three black cereal and oil crops had come to the best marked level(P<0.01). The ranges and CVs of TAC ,ORAC,total anthocyanins and total phenolic compounds of 10 shares black corn were less, the ranges and CVs of 108 shares black rice and 30 shares black soybean were great. Pertinenced analyse showed that TAC ,ORAC,total anthocyanins and total phenolic compounds of three black cereal and oil crops showed the best marked positive pertinence(P<0.01).It prompted that antioxidation effect was related with the total anthocyanin contents and other total phenolic compound.(2) The analysis on scavenging actions on four free radical O2-.,.OH,H2O2 and DPPH of crude anthocyanin extracts from black rice , black soybean and black corn showed that the crude anthocyanins extracts from 3 black cereal and oil crops had varying free radical scavenging effect on O2-., .OH, H2O2, DPPH ,displaying the dose-effect relationship.
