Cerebrovascular and cardiovascular diseases are the major diseases which severely harm human health. The disorder of lipid metabolism, especially the high level of blood cholesterol, is the basic pathogenic factor. How to regulate the blood lipid effectively is a hotspot in nutriology research. The basic pathology of cerebrovascular and cardiovascular diseases is atherosclerosis (AS), while dyslipidemia is closely correlated with cardiovascular disease. Lipid metabolism dysfunction induced AS is the important risk factor in the occurrence and development of cerebrovascular and cardiovascular diseases.Hyperlipidemia is always accompanied with hypercoagulate state. Studies indicate that endothelial cell damage and endothelial dysfunction mostly participate in the process of atherogenesis. High level of LDL in plasma,especially oxidized LDL(OX-LDL) can damage endothelial cell gently,which allows atherogenic lipoprotein to deposit in the subendothelial space easily; endothelial dysfunction can upset the balance between vasodilation and vasoconstriction,and promote or exacerbate the vessel wall damnification and atherogenesis.Lipid peroxidation plays an important role in the occurrence of AS. Studies show that the main reason is that lipid peroxidation reaction can cause contraction of endothelial cell and injury of cytoarchitecture (especially biomembrane system) and the production of lipid peroxide(LPO)can change the lipid composition of cell membrane and denature the cell membrane enzymes and proteins, which result in the destruction of the structure and function of cells. Therefore, the research on the harmful effects of lipid peroxidation attract people attention gradually.Soy oligosaccharides(SOS) and soy oligopeptides(SOP) are two kinds of biologically active substances extracted from soy in recent years.Some investigators have reported that SOP regulates blood lipid by reducing serum concentration of total cholesterol(TC)and triglycerol(TG).Others indicate that SOP can eliminate OH·and promote intestinal cholesterol degradation.
