Object:Lentinus edodes (Berk) Sing belongs to mycota, basidiomycotina, hymenomycetes, agarcales, tricholoma. The Lentinus edodes is one of the most famous edible funguses in the world, which has very high nutritional and medical values. In these decades, the domestic and international scholars carried on a large amount of researches to it. They proved that the Lentinus edodes could resist aging, hepatic damnification, malignant hyperplasia, infection and regulate immunity. At present, most of these researches focus on component of the fresh body, like polysaccharide and so on. The polysaccharide of Lentinus edodes is a kind of immunity intensifier. They have already proved it could inhibit the proliferation of virus and tumor, adjust the immune system and stimulate interferon. Now some polysaccharides have been applied to the clinical treatment. On the other hand, many reports show the polysaccharide is combined with protein. Some overseas scholars have withdrawn a novel kind of serine proteinase inhibitor from Lentinus edodes, and studied its structure, nature and function mechanism. But there are still few researches about fermentation liquor.The fermentation cycle of Lentinus edodes fermentation liquor is 5~7 days, far shorter than fresh body's growth cycle.
