Chinese yellow wine (YW) has been famous for its good nutrition and health-care functions. Not as profound as red wine, the researches of YW so far are focused on the component content analysis, which diminish the efforts in the promotions of YW. In our study, we clarified the health-care functions by the means of analytical chemistry, animal experiment and biochemistry, providing basis for the further developments of YW.There were four sections in the research of YW: the oxidation resistance, immune functions, metabolic functions and body functions. At first, we evaluated the antioxidant properties of YW, including the total antioxidant activity, Reducing capacity, DPPH radical and superoxide anion scavenging activity, total phenolic compounds, and Chelating activity. Secondly, the immune functions section revealed the effects of YW on humoral immunity, cellular immunity and nonspecific immunity of rats. Thirdly, in the metabolic functions section, we investigated the elimination effect of YW on lead content, regulation effect of YW on the Calcium- phosphorous metabolism, and the effect of YW on the rat liver GPT activity. At last, the anti-aging, memory improving and the tolerance of oxygen-deficient properties of YW indicated the effects on body functions.To sum up, we drew the conclusion that YW had anti-aging, anti-oxidation, improving human immunity, memory, and the tolerance of oxygen-deficient, improvement of lead poisoning and bone metabolic disturbance these excellent health-care functions in our research. This work supplies important basis for further study.
