Polyunsaturated fatty acids (PUFA) are essential fatty acid in human and animals and play an important role in their physiological activity. It has significant protective effect on cardiovascular health, tumor and diabetes mellitus. Mortierella isabelina is filamentous fungi and recognized producer of PUFA. The study on Mortierella isabelina is fasten on breeding and the technique of ferment, and so on. There are a few reports of separating and reconstructing the genes of the key enzyme on producing PUFA.Our college has done a great deal of studies on the research and development of Mortierella isabelina, and researched the nutrition of the power of it for the first time, In the study ,we set up a stable model of diabetic II using alloxan and an atherogenic diet for the first time, at the same time, we set up a stable model of hyperlipemia using an atherogenic diet. In this thesis, we try to extract its different nutrition using different solvent, the lipid-solubility abstraction and the water-solubility abstraction were gained and to study the function of the abstraction regulating the metabolism of fat and sugar in hyperlipemia and diabetes mellitus rats. And the serum total cholesterol (TC), triglyceride (TG), high density lipoprotein cholesterol (HDL-c) and glucose (GLU) levels were detected and analyzed. At the mean time, the levels of TC, activity of FAS and lipase from rat livers were detected. The histology of liver and pancreas was analyzed. The results showed that Mortierella isabelina power and the abstraction from Mortierella isabelina reducing serum TC, TG, GLU levels, hoisting serum HDL-C level, reducing liver cholesterol level, and the activity of FAS, boosting the activity of lipase in hyperlipemia and (or) diabetes mellitus rats. The results showed that the lipid-solubility abstraction reducing serum TC in hyperlipemia rat and protecting the histology of pancreas in diabetes rat wasbetter than the water-solubility abstraction, but that decreasing serum TG is opposite. It indicates that the lipid-solubility abstraction and the water-solubility abstraction have different hypoglycemic constituents and reducing fat components. In conclusion, the Mortierella isabelina power and the abstraction from Mortierella isabelina have important benefits on the prevention and treatment of hyperlipemia and diabetes mellitus, and lessening the syndrome.
