DON (Deoxynivalenol) toxin is one of the main pollution mycotoxins on grain and its products. And it has an important impact on human health, agricultural exports. Bound DON and the DON toxin in free state whether there is a certain relationship between the transformation of the current urgent need for further study, other ways to remove processed grains and their products in the DON toxin is increasingly focused on food safety in today's important issues. In view of these above questions, a growing period of Six kinds wheat seeds at different times in the free state of DON toxin and bound DON toxin was determined and compared, DON toxin containing wheat grain infected with mycelium scanning electron microscopy, another study was through the extrusion to removal DON toxin in flour and optimize the parameters.The results were summarized as follows:1. In this paper, HPLC method using to detect DON toxin, the method of recovery between 82.50% 90.32%, relative standard deviation less than 4%, precision test standard deviation is less than 3%, there is a higher detection sensitivity and accuracy.2. In the analysis Yangmai 3, Ningmai 6, Yang Mai 4, Wangshuibai, Xinong 979, Sumai3 six different resistant wheat varieties, In addition to Sumai 3 toxin DON in wheat grain were not detected at different times, the rest of several wheat grain inoculated with Fusarium graminearum were can clearly detected after 7d.3. In the initial extraction process of DON toxin,Ningmai 6, Yangmai 3, Yangmai 4, Wangshuibai, four kinds of Wheat Grain Wheat Grain DON toxin in the initial extraction process, the residue of bound DON toxin was not detected, trace or non-existent. But after the preliminary extraction Xinong 979 residue obtained are still exist bound DON toxin. In addition, after preliminary extraction of the residue of bound DON toxin accumulation over time show trends.4. in the tests, Ningmai 6, Yang Mai3,, Yang Mai 4, Xinong 979 and Wangshuibai five kinds of wheat grain existence DON toxin, the results show that the free state of DON toxin and bound toxin DON in the wheat growing season there a certain degree of degradation.5. In addition to Ningmai 6 bound DON toxin in the growth stage of wheat grain in combination with the highest state, the remaining four kinds of wheat, the grains bound DON toxin in the mid to late show significant degradation than the free-state results.6. Yang Mai 3, Xinong 979, Wangshuibai presence of wheat grain growth and maturation in the latter part of (28d) free state DON toxin, bound DON toxin, DON toxin total to extreme, then the phenomenon is to decline, indicating that in the latter part of the more Degradation effect of pre-marked.7. In the study, the free state of DON toxin and DON toxin bound to increase volume and degradation rate can not be extrapolated, so it can not under the free state of DON toxin and DON toxin bound the same or the opposite trend to determine whether there is increase or decrease in the transformation of the relationship between the two.8. DON toxin containing mature seeds of wheat, By SEM the main hyphae of Fusarium graminearum infection attached to the surface, Bacterial contamination of other similar cases, the structure of dense DON toxin content in wheat grain varieties less.9.
