The study reveals the negative impacts of three Growth-promoting agents on the quality of Tilapia and the potential hazards of residues. As a result, it alert cultivators and fish processing factories on using these three growth-promoting agents and has guidance on the progress of aquaculture.In the experiment, we used signal-factor aquaculture method and make basic feed as control group. We feed Tilapia for 5 weeks with basic feed adding Flavomycin 4mg/kg, Olaquindox 125mg/kg, Quinocetone 125mg/kg respectively to determinate the growth performance, body size, liver body weight ratio, stress response, body muscle quality the drug residue.The result of determination of growth performance, body size and stress response shows all these three agents can improve growth performance, protein efficiency, the apparent protein digestibility and reduce the feed coefficient; in group Quinocetone, the body wide index and body high index decreased and fatness increased; all the three growth-promoting agents increased the ratio of liver body weight significantly and decreased the anti-anoxia ability.From the result of determination of the muscle nutrition composition, fatty acids and texture, we can see that compared with the control group, water content of the group Flavomycinb increased significantly (P<0.05) and crude ash decreased extremely significantly (P<0.01); crude fat, water content of the group Olaquindox and Quinocetone increased and crude ash decreased all extremely significant differences (P<0.01); essential fatty acids were decreased significantly in groups of Flavomycin and Quinocetone (P<0.05). DHA concentration of three experimental groups was all extremely significantly different (P<0.01). Analyzed by texture profile analysis (TPA), the whole texture of different groups were tested. The fracturability declined extremely significantly (P<0.01) in all the three test groups; the hardness decreased significantly(P<0.05) in group Quinocetone and extremely significantly (P<0.01) in other test groups.The result of determination of the residues indicate in group olaquindox residues in muscle, liver and intestina were 0.70±0.02μg/g, 2.85±0.64μg/g, 4.12±0.17μg/g , respectively. There was no residue in muscle of group quinocetone, and 0.61±0.02μg/g, 0.04±0.01μg/g in liver and in intestina respectively. The residues of group flavomycin were 0.0019±0.0011μg/g in liver and no residues was detected in muscle and intestina.From what has been discussed above, our results showed that tilapia who diet with either the three growth promoting agents could increase growth capacities, while they also had bad influence in the fish's health, nutrition and taste of muscles, affected the development of aquaculture; at the same time, we can discriminate whether the fish intook growth promotion agents or not based on liver hypertrophy and bad carneous surface loosening, provide a theory accordance to the consumer when they would like to select a fish products; the drug residues have potential hazard to the healthy of human, our article could provide a reference for constructing and consummating of laws and regulations of medication technique in aquaculture of our state.
