Also it is realized as precious resources for protection of people's health. Recently the breeding method and nutrition quantity of color wheat are increasing studied and utilized. Wheat grain, which contains a number of natural health-promoting antioxidant also begun to attract people's attention. For these reasons, breeding the wheat varieties with high content of vitamin from color wheat resources and developing their nutrition quantity and function of health care can supply the theory basement of high-vitamin wheat breeding and gene clone, at the same time, meet the needs for functional wheat.We selected the wheat species of black grains black wheat 76 and white grains VICTO, the F8 generation twelve Sib-lines that are hybridized offspring of them and the 10 species of Dongjian series as the materials. By method of HPLC/MS/MS (the electrospray operated in Electrospray Ionization (ESI), negative ion mode, monitored use multiple reaction monitoring (MRM)). we exactly determined and compared the content of VB1,VB2,VB6 and VE. The pigment contents in grains were determined by spectrophotometry. The relationship between B1,B2,B6,VE and the pigment content of wheat grains was analyzed to supply the theory basement for utilization of vitamin in the wheat grains and wheat quantity breeding. The main results are presented as follows: There are great variations in content of B vitamins in Black Wheat 76 and VICTO and its twelve sib-lines of their hybridized offspring. The differences of the content of VB1,VB2 and VB6 for the twelve sib-lines was extremely significant. The difference of VB content of Dongjian series was also extremely significant. The contents of VB and total anthocyanin in wheat grain did not show significant correlations. Wheat with deeply colored grain is not rich in B vitamins. The VB content of wheat grains is controlled by genetic effects, which presented significant heterobeltiosis.The contents ofα-VE,β-VE+γ-VE ,δ-VE and total VE contents in grains of twenty-four color wheat varieties were accurately determined and the pigment contents in grains were determined by spectrophotometry. Analysis of the relationship between the pigment content and VE content showed that there exists remarkable difference between the VE content and pigment content among different varieties. The average total content of VE for the 10 species of Dongjian is 36.09μg/100 g, ranging from 18.94μg/100 g (D-10) to 51.83μg/100 g(D-8). The coefficient of variation is 0.41. The significant difference of the VE content indicates the synthesis of VE was controlled by genes and showed extreme variation among different genotypes. The content of pigment and VE presented extremely significant correlation. The pigment content can be used as index of choosing high VE species in color wheat breeding.
