In this paper, the most appropriate proportion and process parameters of fortunella swingle-honey powder, the influence of assistant ingredients and spray drying parameters on fortunella swingle-honey powder were studied. The most appropriate proportions and technology in fortunella swingle-honey powder were obtained, the results were as following:1. By the orthogonal experiments, taking the sense evaluation as the target, the most appropriate proportion of the raw materials in fortunella swingle-honey powder were as follow: honey was 44 %, fortunella swingle was 33 %, assistant ingredients was 22 %.2. The influence of different sorts and quantity of assistant ingredients on the viscidity of fortunella swingle-honey solution, powder yield, moisture content and solution capacity were instituted and got a better match of the ingredients from experiments. The most appropriate proportions of raw materials were as follows: honey was 44 %, fortunella swingle was 33 %, malto dextrin was 9.2 %,β-Cyclodextrin was 2.76 %, gelatin was 3.68 % and modified starch was 7.36 %.3. By single factor and orthogonal experiments, taking the efficiency and hygroscopic capacity of fortunella swingle-honey powder as the target, spray drying process parameters were researched. The results showed that the factors of primary and secondary order to the yield and hygroscopic capacity of powder was: inlet air temperature>raw materials >raw materials concentration>airflow. The most spray-drying conditions were as follows: inlet air temperature was 180℃, raw materials was 16 mL/min, liquid concentration was 25 % and air flow was 800 L/h.4. The rehydration, dissolubility, stability, particle size, instant solution, and moisture absorption and the major nutrients of the fortunella swingles-honey powder obtained by the most appropriate proportions and spray drying parameters were measured, the results showed that the physical and chemical properties of fortunella swingles-honey powder met the industry standards and nutritional content had no significant difference between the material and product.
