In this paper, taked the tartary buckwheat as a raw material, through compared three extraction method - organic solvent soaking , ultrasonic wave extraction and supercritical CO2 extraction ,had verified the bitter buckwheat lutin's extraction process and the technology parameter; Through adsorption and desorption ability's research, to D14, D16, D101 three types of macro-porous resin for rutin from tartary buckwheat, had obtained the best technological conditions which lutin from tartary buckwheat purifies; Simultaneously, had been clear about the tartary buckwheat lutin's anti-oxidizing effect.The results indicated:1. the organic solvent soaking , the ultrasonic wave extraction process and the CO2 supercritical extraction method to the lutin from tartary buckwheat extraction rate respectively was 94.78%, 93.15% and 44.56%. According to generalized analysis's result, this research taked the ultrasonic wave extraction process as the optimum extraction method, its optimum extraction condition was as follows: extractant was 8 times in raw material ethyl alcohol, raw material granularity was 60 items, supersonic time was 40min, supersonic power 400w.2. the macro-porous D16 was more suitable, its best separation and purification condition was: On column fluid pH value 4.0, on column fluid temperature 40°C, eluent 70% ethyl alcohol, eluent volume 300mL.3. rutin from tartary buckwheat had certain anti-oxidizing effect. function to the lard, the oxidation resistance initial period performance for the tendency which strengthens gradually, when the recruitment was 0.2% achieves the best anti-oxidizing effect, but might as well 0.02%BHT and 0.01%TBHQ, when the extraction recruitment continued to increase, the oxidation resistance effect dropped. The rutin from tartary buckwheat and Vc according to 1:1 duplicate matched, had the very remarkable coordination anti-oxidizing effect to the lard; The rutin from tartary buckwheat and Vc duplicate matched the group POV value to be lowest, explained its effect surpass the same density rutin from tartary buckwheat and sole oxidation inhibitor 0.05%Vc group, and strong to 0.02%BHT increased lonely.4. the rutin from tartary buckwheat and hydroxy free radical which produced by the Fenton system exsitted in relations with its density. The anti-oxidant density was bigger, apparent percentage clearance D was also bigger. But when the rutin from tartary buckwheat density increased after the certain extent, the apparent anti-hydroxy free radical percentage clearance D growth slowed down until saturation, increased the anti-oxidant density again, apparent percentage clearance D basic no longer increased.5. the rutin from tartary buckwheat had the strong 02- elimination ability, with same level and anti-scorbutic acid , when the sample solution concentration was 0.6 mg/mL, the percentage clearance reached the maximum value 78.23%.The above findings indicated that the rutin from tartary buckwheat had the obvious oxidation resistance activeness.
