Pinus koraiensis Sieb.et Zucc, belongs to pinus of pinaceae , evergreen coniferous trees, is the most important forest tree species in north-eastern of China, and is also an important species of valuable timber. Pinus koraiensis is not only a superior raw materials for wood, paper and pine oil, but also has excellent value for nutrition and health-promoting. Pine nuts of Pinus koraiensis is crispy and delicious, also is longevity fruit.This experiment took pinenut shell from Pinus koraiensis as rough material, studied on the extraction process, purification , physciochemical properities of pinenut shell pigments from Pinus koraiensis by the traditional method of organic solvent extraction, silica gel column chromatography and modern analysis technique.This thesis adopted the method of alkaline extraction pinenut shell pigments from Pinus koraiensis, absorbance and extraction rate as an index, selected the solvent concentration, extraction time, extraction temperature, extraction times of the four factors of single-factor test. Based on the results of single factor test, designed orthogonal experiment, through analysis of variance obtained the extraction time has a significant influence, ascertained the best solvent is the concentration of alkaline was 2%, the extractive time was 8h, extractive temperature was 100℃, Extraction for three time, the absorbance was 1.216, the extraction rate was 15.74%.Using silica gel as adsorbent, by gradient elution to purify the pinenut shell pigments from Pinus koraiensis. Using ultraviolet spectrophotometer scanning for structural identification, received 26 group-eluting material, shows that the method is suitable for separation pinenut shell pigments from Pinus koraiensis. Eluting compounds such as the yellow color, yellow, yellow green, light yellow-green, brown, light brown, mainly in the vicinity of 250nm and 270nm strong absorption, no significant absorption of visible light area, the initial guess of these substances are mainly flavonoids compounds.Studied on physciochemical properities of pinenut shell pigments from Pinus koraiensis, and qualitative analysis. The results showed that the pigments were flavonoid compounds and highly light-tolerable and heat- tolerable. Common food additives like glucose and sucrose could hardly affect stability of the pigments, However, oxidants, reductant and sodium benzoate could destroy their stability. K+and Na+ had insignificant effects on color and stability of the fat-soluble pigments from Pinus koraiensis and the water-soluble pigments from Pinus koraiensis., while Cu2+ and Fe2+ greatly damaged the pigments.
