| Used as the anisotropic body, thick-skinned honeydew melons were studied by the flat-plate compression, property of quality and tensile test on peel with QTS-25 Texture Analyser through sampling on different depths and positions of two kinds of thick-skinned honeydew melon. By established a correlation between parameter of each direction mechanical characteristics and property of quality, this research has important significance on further processing to promote additional value of thick-skinned honeydew melon, as well as providing parameters and theoretical basis for nondestructive test of quality index and classification equipment. The main results and conclusions were showed as follows:(1) The distributive law of each direction mechanical characteristics parameters and the force-deformation curve of compressed flesh had been obtained through test. For the same sampling site,the outer layer was higher than inner layer;for the same sampling depth, the part of fruit stalk was the highest, the site of upper middle, lower middle and ambitus show minished in order, and the bottom was the lowest.(2) Different sampling position, depth or compression rate had significant effect on parameter of each direction mechanical characteristics. There was a positive correlation among those parameters, in which the highest correlation have been present between fracture force and fracture energy, the opposite conclusion was shown in fracture force and deformaion quantity.(3) It can draw the conclusion there has a regular distribution between the parameter of texture profile analysis and Physical and Chemical Indexes which sampling on various position and depth of flesh from the experiment. For the same sampling position , measure indexes including Hardness, Fracturability, Chewiness, Springiness and Moisture content were all show that outer layer were higher than inner layer,but the indexes of Viscosity, Refractometer brix and Total acidity were opposite. For the same sampling depth, The distribution of indexes that first part mentioned above were almost uniform, manifested as minished in order from the position of fruit stalk to bottom, the changing of Viscosity was opposite to the former mentioned.(4) A regression equation about the parameters of each direction mechanical characteristics and quality indexes has been established, this equation was meaningful and significant. (5) It obtained the distribution law of each direction mechanical characteristics parameter and the force-deformation curve of peel after drawing that sampling on different position of thick-skinned honeydew melon.The distribution law of elastic modulus and failure strength in each part was uniform, the concrete forms was minished in order according to sequence as follows:the site of fruit stalk, bottom, lower middle, upper middle and ambitus, the distribution law of most elongation was different from indexes above.There was an influence on difference of each direction mechanical characteristics parameter caused by different stretching rate, sampling site and their interaction. Correlation were observed among those three parameters. |
