| The slaughter characteristics, meat production and quality of Poll Dorset×Small Tail Han Sheep F1 (DHF1) and Small Tail Han Lamb (HH) under the conditions of intensive farming were comparatively studied. The effects of slaughter age on slaughter characteristics, meat production and quality of DHF1 and HH lamb, and the effects of sex on slaughter characteristics, meat production and quality of 7-month-old DHF1 lamb were also studied. The correlation between collagen content and shear force value of lamb muscles was analysized.Live weight and carcass weight of the 13-month-old DHF1 lamb was 70.40kg and 35.78kg, which was 33.59% and 49.64% higher than HH lamb (p<0.01), the dressing percentage was significantly higher than HH Lamb (p<0.05), and the weight of lean meat was 23.83% higher than HH Lamb (p<0.05). It showed that the slaughter performance of DHF1 lamb was significantly higher than HH Lamb. Drip loss was 13.56% higher than HH Lamb (p <0.05). There was no markedly difference in myoglobin,shear forc,dry matter (DM), crude protein (CP), crude fat (CF), crude ash content between DHF1and HH lamb meat. It showed the meat quality of HH lamb and DHF1 lamb was no significant difference.The live weight and carcass weight of 7-month-old DHF1 lamb was 49.63±0.74kg and 23.50±1.87kg,the 13-month-old DHF1 was higher 41.89%(p<0.01)and 52.69%(p<0.01)than that of the 13-month-old respectively. The dressing percentage of 13-month-old DHF1 lamb was significantly higher and the weight of lean meat was higher 30.39%(p<0.01) than 7 months Lamb (p<0.01) . The live weight and carcass weight of 7-month-old HH lamb was 37.90±3.14kg and 16.67±1.15kg.the 13-month-old HH was higher 39.05% (p<0.01)and 43.43%(p<0.01)than that of the 13-month-old respectively. The tenderness of 7-month-old lamb was better than 13-month-old (p<0.01), and CF content in Longissimus dorsi (LD) of 13-month-old lamb was markedly higher than 7-month-old (p<0.05). The contents of DM, CP, crude ash had no markedly difference. It showed that 13-month-old lamb on meat production was very markedly than 7-month-old, but 7-month-old lamb's meat quality was better than 13-month-old.The live weight and carcass weight of 7-month-old DHF1 male lamb was 49.63±0.74kg and 23.50±1.87kg, higher 11.96% and 14.36%(p<0.05)than that of the females respectively. There was no significant difference between the 7-month-old male lamb and female lamb in physicochemical properties and contents of some nutrients of LD.The correlation between collagen content and shear force value was strong positive in 7-month-old lamb muscles(rDHF1=0.965,PrDHF1=0.002;rHH=0.922,PrHH=0.009).The present study showed that meat production of DHF1 lamb was higher than HH lamb and therefore it was more suitable for production of lamb than HH Lamb. Meat production of 13-month-old lamb was significantly higher than that of 7-month-old lamb, but the meat quality of 7-month-old lamb was better than 13-month-old. Meat production of male lamb was higher than that of the females, but there was no significant difference in meat quality and therefore the male lamb was more suitable for production of lamb. |
