| In order to research the best aging mode of flue-cured tobacco in Jia county of Henan province,we simulated aging by using aptitude constant-temperature-and-constant-humidity trunks to control the tobacco aging environments,and did tobacco aging experiment.We studied the changing rules of tobacco physics-chemical characteristics and sensory quality under different conditions, and determined the best aging conditions of different grades flue-cured tobacco leaves. The results indicated that:1 Changing laws of chemical components in different temperature and humidity conditions during tobacco aging and correlations with aging factorsStarch and total nitrogen presented small range downtrends during the whole aging process,solubility protein,nicotine,solubility total sugar,pigment,and polyphenol descending reasonably,contents of nitrite and nitrate ascending at first,then dropping, reducing sugar behaving contrary,and changing laws and ranges of each chemical components of different temperature and humidity conditions were different.Results of correlation analyse showed that relationships between aging time and temperature-humidity and most main chemical components respectively achieved notability and mighty notability positive correlation.2 Changing laws of neutral volatility aroma components in differentMost aroma components presented large uptrend during aging under different temperature and humidity conditions,which mainly behaved that contents of carotenoid degradation,cembranoids degradation,browning reactions,neophytadiene and neutral volatility aroma increased,but the content of aroma aminophenol degradation increased in mid-temperature and mid-humidity treatment,and others decreased.3 Sensory smoking of tobacco quality under different temperature and humidity conditions during tobacco agingWith the aging extending,inherent quality of flue-cured tobacco improved.The quality of aroma,volume of aroma,strongness,offensive taste,irritation,after taste and combustibility improved distinctively.Compared to antitheses,treatment of mid-temperature and mid-humidity were relatively good which feasible and optimal ageing time is 15-21 and 18 month.Next was high-temperature and mid-humidity treatment,and it could reach better qulity at the time of 12-21 and 18montht.Aroma quality of other treatments improved slowly,which took long times to achieve quality peak,and quality stabilization periods were short.4 Dynamic changing of physical properties during tobacco agingEquilibrium moisture contents of three grades were uptrended in 9months,then decreased until aging ended.Filling power presented undulant trends during the aging process,and most treatments peaked at 9 months,then dropped to low vale at the time of 18 or 21 month.5 Changing laws of chemical components in different wrappers during tobacco aging and correlations with aging factorsContents of nicotine declined slowly in the course of aging.Starch and total nitrogen of the three grades dropped greatly,while the protein and nicontin dropped measurably.Simple analyse by SPSS indicated that changing of total sugar and starch contents achieved notability and mighty notability positive correlation with grades,aging times, et ac.6 Dynamic changing of main chemical components ratios during tobacco agingValue of sugar and nitrogen decreased in a certain extent,and nitrogen/nicotine, K/CL up.The values of chemical components almost harmonized.7 Sensory smoking of tobacco quality in different wrappers during tobacco agingSensory smoking indicated that tobacco quality improved more or less with the extension of aging.According to upper leaves and cutters,aging has obviously promotive effects to enhance the quality of aroma,volume of aroma,combustibility,et al,but the quality of lower leaves did not improve notability. |
