As vigorous development of potato starch processing industry and starch deep processing,specific purpose and pocessing potato cultivars are needed more and more in China, the need ofvarieties with high and good quality of starch is compelled. However, the fundamental reaserch ofpotato starch processing was imperfect. At present middle level starch content of the local maincultivars were always used to produce starch, lacking of starch processing and specific purposecultivars suitable for market. Without scientific theory and practices, processing enterprises andplanters selected starch processing cultivars blindly. Meanwhile, the starch content, starchproductiong and main quality characteristics are different under different ecological conditions. Somaking the best of different climatops and cultivate conditions that to result in different displays ofvarieties characteristics, we can analyze and select starch processing and specific purpose cultivarswhich suitable for definite regions. Therefor this study can provide basic data and theory for farmersand processing enterprises.Eight dominant cultivars with good comprehensive characteristics and different maturing time,Dongnong 303, Youjin, Bashu 8, Jinshu 11, Kexin 12, Yan 97-8, Qingshu 2 and Longshu 3 used asmatrials, were grown at different locations with different latitudes ecological conditions, Keshan,Haerbin, Yanji, Benxi, Zhangjiakou and Datong in 2005 and 2006. In addition, above mentionedvarieties were grown in Jiagedaqi in 2006. The same experiment design was carried out at all sites.Different cultivars grown different locations would have different characteristics, by analyzing this,we can initial recognize the heredity and variation regularity in northern China. Also, the adaptationspecial cultivars to the best local ecological conditions were evaluated and good varieties wereidentified which suitable for different locations. The main results are summarized as followed:1. In northern China, Starch content increased as altitude gose up; in the region of 41°15′N~52°24′N starch content was increase as the latitude goes up. Higher starch viscosity was appearedin northeast region than in northern China.2. The differences of starch content between cultivars were evident than that between regions,which meant starch content were affected by genetype. The differences of potato starch production,pastification temperature and viscosity between regions were evident than that between cultivars, it is to say these characteristics were greatly affect by environment.3. Yan 97-8 and Longshu 3 were the proper starch processing varieties in Jiagedaqi; Yan 97-8can grow for lower pastification temperature in this region. However, those two cultivars were bothlate maturing, so we should think over carefully when introduce new cultivars in Jiagedaqi becauseof the special ecological condition in this location. Dongnong 303 can be used as cultivars for higherviscosity in Jiggedaqi. Yan 97-8 and Kexin12 were proper mid-late maturing cultivars for starchprocessing at Harbin, Yanji, Benxi and Zhangjiakou. In Keshan local cultivars, Kexin 12 should beused for starch processing. In Datong there is no proper cultivars for starch processing because eachhave low starch production. The starch content of Bashu 8 and Jinshu 11 showed stability but havelow starch production. Dongnong 303 can be considered as Keshan, Harbin, Benxi, Zhangjiakouand Datong. Longshu 3 can be used as low pastification temperature cultivars for processing starchin Yanji. As for selecting high viscosity cultivars, Kexin 12 was the proper cultivars, in Keshan,Harbin, Benxi, Yanji, Zhangjiakou and Datong.4. The negative correlation between starch content and commercial tuber rate exist, whichmeant higher starch content tuber would be smaller one. Starch content was correlated negativelywith starch granular, which meant the starch granular were increase as the starch content goesup. The correlation between commercial tuber rate and starch granular, viscosity were negativesignificantly, which meant the bigger tuber would have smaller starch granular and lower viscosity.
