Edible fungi is a kind of food that owns the characteristic of eutrophy, delicious tastiness, low fat, high protein. The edible fungi is reputed as"the zenith of food protein"and"natural foods"in international world. With the development of science and technique, the field about technique of cultivating edible fungi is widened, especially it possesses significant position in developing ecological agriculture possess and deposits galactic exploitative potentiality. However, with the volley of industry and city pollutions as well as irrational use of agricultural chemicals and chemical fertilizer, the heavy metal contamination of environment is still increasingly serious. In order to understand heavy metal contents in main edible fungi in Jilin province, the champignon, meadow mushroom, cap fungus, jelly fung and flammubine velutipes are collected from the typical production enterprises with all kinds of category (large, middle, small) which produce edible fungi in six different regions (Baicheng, Songyuan, Changchun, Jilin, Tonghua, Baishan, Yanbian) of Jilin province. Three hundred collected samples are detected for the contents ( Pb, Cd, Hg, As) in edible fungi with standard methods (GB/T5009 17-2004, GB/T5009 12-2004, GB/T5009 15-2004 and GB/T5009 11-2004) that are regulated by the nation. Meanwhile, it checks safety evaluation which is prior gained. It finds that the contents of Pb is 0.84, 1.60, 1.31, 0.67 and 0.99. The average contents of Cd is 1.39, 0.09, 0.29, 0.19 and 0.29. The average contents of Hg is 0.10, 0.76, 0.14, 0.09 and 0.04. The average contents As is 0.04, 0.23, 0.03, 0.07 and 0.07 in edible fungi. The beyond standard rates of Pb in champignon, meadow mushroom, cap fungus and flammubine velutipes is 5%,16.7%,8.3% and 1.7% but the content of Pb in jelly fungi isn't...
