The research has developed a method for detecting heavy metals, such as Pb, Cd, Cu,Cr,As and Hg elements, in tissues of goose and goat, the fodder,water and plants in breeding environment by Atomic Absorption Spectrometry (AAS) and Atomic Fluorescence Spectrometry(AFS). The research facilitated us to discriminate the animal food polluted by heavy metal and know the corelation between environmental pollution and heavy metal residues in animal food. Thus, it assisted us to develop heavy metal toxicity and toxicological effect,discuss the relationship between heavy metal residues and certain chronic diseases,raise awareness of hazards of environmental pollution, build the base of green food and safeguard our environment.The results showed that heavy metals, such as Pb, Cd, Cu, Cr,As and Hg,in muscle tissues of geese and goats were relatively lower than those in liver and kidney,in which the mainly polluted elements were Cd and Pb. In some specific areas, Cd and Pb in muscle tissues even exceeded the maximum residue limits. In the most polluted area,the content of Cd was 2.7 times more than the maximum residue limits, and some samples were up to 7.36 times. The content of Pb was 2.7 times more than the maximum residue limits, and some samples reached 3.44 times. The content of Pb, Cd, Cr, As and Hg in liver and kidney varied greatly. For example, the content of Cd in liver and kidney of goats was 7.6 and 5.5 times more than the maximum residue limits respectively, but some liver samples were up to 14.7 times. The content of Pb in liver and kidney of goats was 4.0 and 2.8 times than the maximum residue limits respectively, but one liver sample reached 8.0 times. The content of As in liver and kidney of goats was 4.0 and 2.8 times respectively. The content of Hg was between 10% and 30% of the maximum residue limits in liver and kidney of goats.The content of Cu in goose liver samples and liver and kidney samples of goats were more than the maximum residue limits. Liver samples of geese in one area were up to 4.4 times. The content of Cu in liver and kidney of goats in one area was up to 7.6 and 5.5 times more than the maximum residue limits respectively. In some areas,the content of Cu in muscle tissues of geese were higher,which might be caused by additive with high concentration of copper. The content of Cr in tissue was similar to Cu. So we should pay more attentions to certain additive.In general, the mainly polluted elements were Cd, Pb, As and Cu. In some areas, pollution caused by Hg also should be noticed.
