This article mainly discussed the quality changes of Trichiurus Haumela by different frozen methods (liquid tablet frozen device of -30℃, rapid freezing of high wind at 35℃,and fridge freezing under -20℃) and frozen storage condition(-10℃,-20℃,-30℃, antifreeze:4%sucrose+4%sorbitol). The assess indexes including the pH value, dehydrating rate, TBA value, TVBN value, salt soluble protein, Ca2+-ATPase activity and TPA(Hardness, chewiness, resilience). Basic content of Zhoushan Trichiurus Haumela and the quick-freezing curve regularity are also analyzed. The results indicated that quick-freezing , lower temperature frozen and adding antifreeze were propitious to enhancing the quality of Trichiurus Haumela.1.Based on the center temperature freezing curve of Trichiurus Haumela by liquid tablet frozen device of -30℃, rapid freezing of high wind at 35℃,and fridge freezing under -18℃, we can draw the conclusion that: liquid tablet freezing and high wind freezing were faster, and their freezing curve was basically the same.Quick-freezing passed the zone of most crystallization and reached -18℃much faster than fridge freezing.2.The basic content of fresh Trichiurus Haumela: water 70.70%, crude protein 18.30%, fat 8.50%, ash 1.40%,others 1.10%. So Trichiurus Haumela is a nutritionally balanced food source, in everyday life we can take it as a dietary reference.3.During frozen storage by the three frozen methods, the value of pH by fridge freezing decreased and increased most quickly, water lost most seriously, TBA value and TVBN value increased highest, also, salt solubility protein, Ca2+-ATPase activity, and the texture parameter was worst. The rusults showed that the effect of liquid tablet freezing and high wind freezing were better to keep good quality characteristics than fridge freezing under -20℃, performing in terms of biochemical and TPA.4. From all the indexes, the lower frozen storage temperature, the better Trichiurus Haumela'quality. The quality of Trichiurus Haumela during freezing storage at -30℃was most excellent.5. There was no significant change of salt solubility protein and Ca2+-ATPase activity on freezing rate. Moreover, salt solubility protein and Ca2+-ATPase activity of Trichiurus Haumela dealed with antifreeze descreaded slower. So antifreeze is helpful to improve quality.
