For healthy and sound development of tea industry, we must seek a balanced developing way, in which not only the basic human requirement can be satisfied, but environmental and food pollution it has brought along can be minimized. Based on the organic tea planting and processing practice, with a focus on the real situation of Hunan Xiangfeng Tea Factory, this essay has researched and explored from some aspects, namely, ecological environment building, tea planting management, quality management system for the processing of organic tea, and by making development in the light of local conditions, and it has creatively developed an organic tea production method with its own features, in which it mainly consists following aspects:1. The tea plantation for Xiangfeng Tea Factory is selected according to the production requirement of organic tea. More specifically, the soil must have high natural fertility, deep soil layer, loose, of sandy structure and high aerated rate. Also it should have no interlayer, no water logging, high content of humus, nutritional yet balanced and in acid or weak acid nature.2. It emphasizes the planning and reclamation process of tea plantation. Ecological tea plantation of compound type will be paid more attention during planning, in which, the environmental requirement as for tea tree growing, surrounding environment influence must be taken into account. Therefore, such trees as China fir, palm and melia azedarach linn, etc. are planted as protection forest or roadside trees. Around tea sapling plantation, white tip clover is grown. During summer or winter season, grass is laid between tea trees. Beside, a pond is dug to adjust the microclimate and also convenient production, processing and transportation are factors worthy consideration as well.3. The tea products produced by Xiangfeng tea plantation consists of Fuyunzaohao, Baihaozao, xiangbolv No.2, Golden tea, Taoyuandaye and Qunti etc, featuring good quality, high yield, strong adaptability and especially suitable to be grown under local geographical and climatic conditions. Favorable result is achieved by trail planting of multi-varieties.4. Pest and harmful weeds control measures and crucial control technique adopted in the management of organic tea planting are being researched, among them, the key pest control index is that the number of shutterbug found from Chanchun tea in little green leaf must be controlled to less than 5-7 head; for shutterbug found from tea in summer or autumn, the number should be controlled to less than 10~12 head; the number for larva of ectropis obliqua prout found in 1 sqm should be controlled to less than 5-6 head, while the number for that in summer or autumn should be controlled to less than 8-10 head; aleurocanthus spiniferus should be controlled to less than 2-3 head.5. Detailed procedures taken by Xiangfeng Tea Factory in fresh leaf management and selection of processing techniques during their producing of organic tea have been researched. Quality standard has been drafted as well. Beside, National food sanitation and processing standard of food industry should be strictly executed. Food additive, pigment or vitamin produced by chemical synthesizing is forbidden to be used or added during tea production. The tools or mechanical equipments used in organic tea processing must be prevented from polluting caused by harmful substance.
