| Recent years, sweet cherry is the fastest development in fruit trees in china. The nutritive value and health functions of sweet cherry are confirmed by nutritionists and medicine scientists. This paper study on the preparation technology, physicochemical properties, stability and biological activity of sweet cherry antioxidants. It provide some theoretical basis for utilization and deep development of sweet cherry.The best extract conditions of sweet cherry antioxidants determined by Single Factor of Citric Acid Concentration, solid-liquid ratio, ethanol concentration, temperature and Orthogonal Experiment. The results showed that, tihe best extract conditions was 50% ethanol, 8g/L Citric Acid, 1:3 solid-liquid ratio, 60℃and 4h.Research shows that sweet cherry antioxidants composed of anthocyanin and a few of phenolic acids, and daylight, high temperature, pH, metal ions, preservative and oxidant all have influence on its stability. daylight, high temperature, alkaline condition, preservative, oxidant and K+,Mg2+,Fe3+,Cu2+ all lead to the decomposition or denaturation of antioxidants.On research of scavenging effect between different varieties of sweet cherry extraction on·OH and O2- showed that different varieties have different antioxidant capacity, but all higher than Vc. Mice test were carried out by the best variety. Results showed that the mices which were given 200 mg/(kg·d) and 500 mg/(kg·d) sweet cherry extraction by gavage, SOD and GSH-Px activity increased and MDA content decreased obviously in blood and liver, and immune index was increased obviously. Sweet cherry extraction could inhibit growth of E.Coli. After 6h, live bacteria decreased, and entered into decline phase.Research on the Measurement of free iron and ferrous iron content of different varieties of sweet cherry showed that, free ferrous iron content of sweet cherry is about fivefold than Spinach. In animal experiment, it increased Hb well. So we can say sweet cherry is an ideal food of iron supplement and enriching blood. |
