As an efficient and safe ethylene inhibitor, 1-MCP gas fumigation was very effective in the storage of broccoli. However, there were still some problems need to be solved. Thereby broccoli'luck''duwu''hayizhi'was chosen as the test material, the processing method, the concentration of 1-MCP, and the effect of preharvest use of 1-MCP on the storage quality of broccoli were studied in this paper. The objective was to provide an convenient way for the storage of broccoli and provide the necessary theoretical and technological support for the preharvest use of 1-MCP.1. Comparing spraying with irrigation, the former was much more efficient in suppressing the respiration rate, ethylene production, the chlorophyll degradation, and water loss. Moreover, the consumption of 1-MCP used by irrigation was 6 times of spraying. Even though spraying was less effective than irrigation in maintaining the content of ascobic acid, generally speaking, spraying was much better than irrigation in maintaining the quality of broccoli.2. Spraying of 1-MCP with various concentrations effectively inhibited the degradation of chlorophyll and ascorbic acid, maintained the content of total soluble solid, reduced the infection of mildew, and thereby prolonged the shelf life of broccoli under different temperatures. The best concentration was shown by 400μL/L 1-MCP. At the same time, it was found that the efficiency of 1-MCP was not proportional to its concentration, which mechanism was still unknown.3. Preharvest spraying of 1-MCP (400μL/L) reduced the loss of weight, total soluble solid and sugar content, lowered the permeability of cell membrane and the activity of peroxidase, retarded the senescence and extended the shelf life, which attained the effect of 1μL/L1-MCP gas fumigation at 5℃.
