The study was based on the reality of the culturing of onion. The mostly used genus were taken for experiment material to do the study.The effects on nitrogen metabolism and peroxidase were studied by different photoperiod and vernalization of Red Creole, Red Leaf NO.3, and Creewo. The result showed that the contents of soluble protein and free amino acid were increased, POD activity were elevated by prolong bright.The 16h long bright was even notable. The effect can also be induced by dark-break, the red light was remarkable, but the blue light did not have the effect. Different bolting onions have the same changes.With Red Creole as experimental materials, the effects on physiological and biochemical characteristics by different treatments and developmental stages were studied. The results showed that: boltings and unboltings were different in the same period. The soluble protein and free amino acid were higher in unbolting onions, the soluble sugar, C/N and POD activity were higher in bolting onions on bulbing period. Else, the soluble protein and free amino acid were higher in bolting onions, the soluble sugar, C/N and POD activity were higher in unbolting onions on bolting period. Maybe it was caused by different growth periods.
