Changes in quality of fruit development, sugar and organic acids related enzymes activities, the effect of different organic fertilizers on the soil nutrient and quality of fruit development, the effect of different nitrogen level on the soil nutrient and quality of fruit development in fruits of Chaohongzhu nectarine variety were studied. Results showed as follows:The growth curve of nectarine fruit in protect cultivation was double"S"which was not in evidence. The stage of stone's hardness was shorter than the orther stages.The most soluble sugars in fruit were reducing sugar at the early fruit developmental stage; The non-reducing sugars accumulated and the reducing sugars decreased continuously during mid and late stage of fruit development.The activities of sucrose synthase(SS) and sucrose phosphate synthase(SPS) increased rapidly during stage of fruit ripening in which the sucrose accumulated rapidly in fruit. The total acids concentration increased at the early fruit developmental stage and gradually declined during the later stages of fruit development. The concentration of malic acid had a similar change pattern with the total acids. The concentration of citric acid increased gradually during the fruit development with little reduced in the stage of fruit ripening. The activities of organic acids-metaboling enzymes showed: There was no relation between the activity of citrate synthase(CS) and organic acids concentration. The activity of malic enzyme(ME) increased continuously in the late period of the development of fruits when the malic acid decreased. The activity of malate dehydrogenase(MDH) increased at the early fruit developmental stage and gradually declined during the later stages of fruit development which was similar with the malic acid concentration. The protein and amino acid content were decreased gradually with the fruit development , so were chlorophyll content in pericarp. But the anthocyanin in pericarp was increased gradually in fruit development.The treatment of applying bio-fertilizer could enhance the content of gein, available P and available K of soil.
