The flavonoids of the Toona sinensis leaves and fruits have been tested by means of tube-test, including flavones, flavonols, flavanones, flavanonol, etc. Total flavonoids content was deteminded to be 4.24% by the spectrophotometric method, using rutin as a standard sample. Different methods have been used in the extraction of flavonoids in Toona sinensis leaves; the best extraction method has been determinded through comparing the contents of flavonoides;the optimum extracting condition of Toona simensis young leaves : ethanol 70%,temperature 50℃,solid—liquid ratio l:12.The contents of flavonoids in T. leaves at different growth seasons have been measured. Flavonoids of antioxidation were got from T. leaves. The extracting rates and the contents of flavonoides by different methods were compared. Antioxidative activity of flavonoids in the leaves to rapeseed oil was tested. The results showed that flavonoids obtained with 70%ethanol have the highest activity against rapeseed oil. Synergistic antioxidative activity of citric acid was the strongest. A preliminary study was carried out on the conservation of fresh pig-meat. The paper also focuses on the application of the extracts from T. leaves as fresh-keeping-membrane under the experimental condition of 70% methanol, 70% ethanol and 60% acetone for the preservation of strawberries, and comparing with water and 0.1% BHT fresh-keeping-membrane treatment. The results showed that the shelf-life was extended to 6-8days. Effects content of soluble sugar , vitamin C, acidity and lose rate of weight as well as rate of bad fruit were defered. In addition, there is no difference between the extracts and 0.1%BHT treatment on the effects of keeping fresh strawberry. The Toona sinensis saponin of santi-microbial activity was experimented with a series of fungi,mold and bacteria. The results showed that the Toona sinensis saponin could effectively inhibit the growth of bacteria, but inactive against fungi and mold. .
