| In order to find the best ways of storage, and keep the peach fruit fresh during storage and shelf life. The physiological and chemical effects of different temperature regimes, controlled atmosphere and high density oxygen treatments were studied through 'Bayuecui' peach as material in this paper.The result showed that: low temperature step by step (from 8#to 0# , 1# every day) and intermittent warming treatment not only not to alleviate the chilling injury, but also to deteriorate the appearance of some symptom of chilling injury. Studies also proved that 'Bayuecui' Peach is sensitive to low temperature (5#).Hot water treatment before low temperature storage improved the peach softness at post-mature stage was accelerated, It heightened the juice-ratio, slowed the soluble solid contents (SSC) of peach fruit at shelf life, lowed the respiration peak, inhibited the total sugar from reducing. It has no significant effects on the activities of PE, PG, CAT, and the activity of POD in storage life. Notably decrease the activities of POD,PPO during 3d Post-mature stage ,and the activity of PPO at 0# storage . However ,this treatment make the Peach fruit brown at 0# storage ahead of 8d ,and aggravate the degree of fruit brown at 0# storage and shelf-life.Peach stored under the condition of controlling atmosphere environment (62 10%+CO2l0%) keeps peach fruit the best quality. This pattern not only relays the appearance of fruit brown, but also significantly decreases the degree of fruit brown, and keeps the peachy color of fruit surface. It slowed the total contents of sugar ,improved the activity of PE ,at shelf-life and the activity of CAT at 0# storage stage was heightened, and the activity of POD was inhibited, and the activity of PPO was improved significantly during two stages of storage and shelf-life.The peach stored with all high-density oxygen treatments, its quality was worse than CK. That the data of these treatments was abstained in this paper was not satisfied, so what is the researches on peach in relation to high oxygen should continue to be studied in future. |
