The oligo-peptide mixture with high F ratio was used to treat the hepatic encephalopathy accessorially and improve the protein nutrition of the patient. In addition it has the functions of anti-lacking-oxygen, anti-fatigue and making the drinker sober.In this test the processing technology of oligo-peptide made by hydrolysis of CGM with Alcalase protease and Papain is systematically studied. Activated carbon is used on the hydrolysate to remove the aromatic amino acid. The salt in the hydrolysate is removed by the cation-exchange resin and anion-exchange resin. The factor such as substrate concentration, enzyme dosage, reaction temperature, pH and time are discussed in emphasis.The results are as follows:1.The optimum hydrolysis condition of Alcalase protease is 5% CGM, temperature 50℃,enzyme concentration 2.5%,pH 8.5. Hydrolyzed for six hours, the degree of hydrolysis is over 28.53%.2. The optimum hydrolysis condition of Papain is enzyme concentration 4.5%, temperature 45℃,pH 6.5,and reaction time 4 hour.3.The best activated carbon was selected from seven kinds ,and its optimum conditions were proposed that temperature was 35℃, pH was 6.0,the ratio of the weight of activated carbon to the volume of hydrolysate was 1 : 10.After absorption of activated carbon, no aromatic amino acid is detected.4. 94.6% salt can be removed from hydrolysate by the cation-exchange resin and anion-exchange resin.5.The product of hydrolysis character with white color, non-bitter, F ratio>20,ayield of 21.59%. The range of molecular weight is about 250-600.
