Variegated mushroom which fruitbody of shiitake develops into when it is in a bad condition is a mushroom with high quality .Because of its high value,it has been paid attention to widely. There are a lot of explanations to its formation.Most of them are from environment and genetics .This text will study its formation by observationing the weather which is valuable for its formation ,analyzing the principle of fruitbody抯 development and physical reaction to dry condition and comparing the strains of variegated mushroom with the strains of common mushroom. The result is as follow. 1. The speed of wind has rather large effect on the formation of variegated mushroom when it arrives at 4m/s. Water contain of log is the most valuable for the formation of variegated mushroom when it is 50%. 2. By observation from the spot ,the weather fit for the formation of variegated mushroom is one with temperature of 15 ~C when the difference of temperature is 10 0C and the difference of humidity is larger than 40%.The low temperature can prevent the split from browning. The difference of temperature and humidity between two shed is apparent because of the different sites. 3. The growing speed of fruitbody of the strains with short mycelia growth period is relatively high ,so the bag should be cut open when the diameter of button is 1.0cm .To the strains with long mycelia growth period ,it is 2.0-3.0cm when the bag is cut open. 4. Whenever shiitake is in a dry condition or a wet one ,the water contain of lamella is stable .But one of epidermis is the most variable and one of flesh is less.The respiratory rate of variegated mushroom is higher than one of common one. 5. The button whose ratio between diameter and height is larger than 0.9 isn抰 apt to become variegated mushroom. Among the mature fruitbody whose ratio between diameter and height is larger than 0.8,variegated mushroom is in a high rate. 6. During the formation of variegated mushroom, the ratio of fruitbody 52 between diameter and height keeps unchanged in tree days. 7. During the formation of variegated mushroom, the diameter of fruitbody stop increasing in one day,. then grow again in a high speed. 8. Esterase isoenzyme pattern of every phase between variegated mushroom and common one is apparently different.A new protein band has been found in soluble protein pattern .It is called LAD protein. 9. By precipitated gradually by ammonium sulfate and then filtered by glucan-100,the protein is isolated and purified initially. 10. The capability of formation of variegated mushroom is different between different strains. But by analyzed on antagonism and RAPD,no difference is found.
