Root-tuber crops mainly refer to the terrestrial plant that have edible root or rhizomatous type, the edible part contains a large number of starch and sugar, can make vegetables, grains, feed and can be used as a raw material making starch,alcohol, etc. The root-tuber crops studied in this paper contained potato crops and taro crops, the potato crops included sweet potato, potato, cassava, Chinese yam, jicama,ginger potato and yacon rhizome of winged yam; The taro crops included sagittaria sagittifolia, zingiber officinale roscoe, colocasia esculenta, eleocharis tuberosa,rhizoma kaempferiae, henry steudnera tuber, konjac and helianthus tuberosus L.Sweet potato starch, potato starch, Chinese yam starch, lotus root starch, pea starch and corn starch were also studied in this paper.Root-tuber crops were studied by Fourier transform infrared(FTIR) spectroscopy combined with statistical analysis contained correlation analysis, principal component analysis(PCA) and hierarchical cluster analysis(HCA). The results showed that the infrared spectra were similar, but differences in position, shape and absorption intensities of peaks were observed in the range of 1800 ~ 700cm-1. The infrared spectra in the range of 1800~700 cm-1 were selected to correlation analysis, PCA and HCA analysis. The correlation coefficients of eight potatoes were between 0.948 and 0.331, the classification accuracy rates of PCA and HCA were 97.5% and 100%respectively. The correlation coefficients of eight taros were between 0.957 and 0.226,the classification accuracy rates of PCA and HCA were both 100%. The correlation coefficient between different colors of sweet potatoes is greater than 0.875, and the correlation coefficient between different colors potatoes is greater than 0.784. The recognition accuracy rates of HCA and PCA of six kinds of starches were 100%. The results of 2D-IR showed that the relative content of ordered structures from more to less were lotus root starch, potato starch and sweet potato starch.The research results showed that the FTIR combined with statistical analysis is a convenient, fast and nondestructive method for the classification of root-tuber crops,which is expected to develop into a method to identify different species conveniently.
