In resent years, the technology of ozone was more and more popular in the field of drinking water disinfection, wastewater treatment, food industry, agriculture and medical treatment. The problem of mass transfer between gas and liquid was key in the technology of waste water treatment. Whether the efficiency of mass transfer between ozone gas and water was high or not would affect the overall effect and economic benefits directly. To raise the technology of ozone in our country, some important problems were studied in the process of mass transfer between ozone gas and water. The main content and results to be obtained were as follow:(1) The existing research results internal and abroad were surveyed and studied. The basic theory and influence factors of mass transfer between ozone gas and water were known. The superiority as the contactor of mass transfer between ozone gas and water were determined through the comparison between different contactors of mass transfer between ozone gas and water after the types of the existent contactors of mass transfer between ozone gas and water were known.(2) The relationship between design parameters of jet pump and the efficiency of mass transfer between ozone gas and water were studied through changing the design parameters of jet pump such as pressure, area ratio, length and diameter ratio and head ratio. On the basic of which, the high efficient intervals of the design parameters of jet pump such as head ratio, area ratio were determined as 0.24-0.35 and 2.0-3.5 through making the total mass transfer coefficient KLa and power efficiency of aeration to be the evaluated parameters. The design improvement of jet pump was proposed as the contactor of mass transfer between ozone gas and water on the basic of existent research.(3) The experimental proposal was designed to verify the effect of mass transfer of jet pump as the contactor of mass transfer between ozone gas and water. The jet pump used to be the contactor of mass transfer between ozone gas and water was designed and ORP was used to evaluate the effect of mass transfer of jet pump. The ORP of ozonated water could reach to 1060 mV under the room temperature and atmospheric pressure. The effect of mass transfer was satisfied.(4) The device of ozonated disinfection of fresh-cut fruit and vegetables was developed by using the jet pump mentioned in previous chapters. Using ORP to control the effect of the device of ozonated disinfection was proposed and the relationship between ORP of ozonated water and the effect of sterilization was studied as well. The technology parameters of the device of ozonated disinfection of fresh-cut fruit and vegetables were studied through the experiments. It is found that the number of total bacterial counts was reduced by the order of about 102 by immerging fresh-cut fruit and vegetables into ozonated water when ORP was above 800 mV.
