The effects of irradiation on the qualities and shelf life of candied canarium albums were studied. Not only preservative-free products of candied canarium albums were developped but a series of radiation sterilization process on candied canarium albums was formed as well. Moreover, the problems of health safety were solved and the shelf life of products was extended, and the development of candied canarium albums were promoted well. The results showed that, the minimum effective irradiation dose of osmanthus fragrans canarium album was 0.4KGy while the maximum tolerated dose was 10.0KGy. The minimum effective dose of salty canarium album was 0.4KGy while the maximum tolerated dose was 1.0KGy, which was the same with the five flavors canarium album. Within the range of dose, the products quality guarantees were as follows: the shelf life of osmanthus fragrans canarium album was not less than 12 months, while the shelf life of salty canarium album was not less than 6 months, and the shelf life of five flavors canarium album was not less than 6 months. They were all in line with commercial requirement. And on this basis, the irradiation standard of candied canarium albums were worked out.For the current status of the current candied canarium albums in our province, combined with the processing application and promotion of new technologies of candied canarium album, we proposed to the measures and ideas of speeding up industrial development of candied canarium albums in Fujian,thus enhancing industry in Fujian the competitiveness of candied canarium albums in domestic and international markets.
