China and Thailand have a long history of international trade agreement and ethnic migrations. Many Chinese traditional cultures have been brought to Thailand with Chinese migrants, the Chinese-Chaoshan culture plays an important part of that. Because most of ethnic Chinese who are living in Thailand are from Chaoshan district. This paper explores how the Chaoshan district food culture has influenced the local Thai food, and explains the historical and geographical reasons of that.This paper is divided into three Chapters and introduces the background of the study and explains the different aspects of the topic. The first chapter briefly reviews historical developments of China and Thailand, and introduces how the Chaoshan-s traditional food spreads in Thailand. The second Chapter has two parts. The first part from historical, political and economical perspective indicates how the Thai-Chaoshan food developed in Thailand; the second part compares the differences between Chinese and Thai version of famous Chaoshan’s foods, such as Chinese noodle (Guotiao), porridge, pigs blood soup, and Lo Wei. The third Chapter shows the connotations of Chinese-chaoshan and Thai-chaoshanfood festivals, particularly focus on three different main types of festivals:Chinese New Year, Dragon Boat Festival, and Mid-Autumn. In conclusion this paper summarizes the findings and provides recommendation on Chaoshan’s traditional food for food evolution in Thailand.
