Visible/Near Infrared Spectra(NIR) of multi-spectral imaging technology is adopted in this work, which is used to study and analyze the distribution characteristics of scattered light that around peach pit. The technology of laser and computer vision were used to analyze the scattered light around peach pit, which adopted the method of cutting step by step that similar to CT. Brix content measurement is an important indicator of internal quality grading of fruit, so it is practical to research the sugar content. In this work, non-destructive testing peach sugar content by multi-spectral imaging that based on spectral analysis and image technology was used to collect back scattering image, which was used to study the relationship between gray value and sugar content of peach. Compared results under strong or weak light, it is obvious that when light is stronger enough to reach pit, the accuracy of model is beyond conducted.Take peach as example. At first, it was important to study factors that influence the depth of incident light. As it is known to us all, the lager of incident light, the deeper of depth of indent light, which is the base of studying the situation of optical field, a conclusion was obtained that there is a positively proportional relationship between incident light and the depth of incident. Through the cutting method which is similar to CT, collected sixty images respectively whose cut way according to parallel to xz or yz plane of pit. Matlab was used to deal with images and analyze data.It can be achieved that when incident light was stronger enough to reach peach pit, light could be distributed around the pit, which has influence on the forward transmission light and backward scattering light. And the closer to the pit, the stronger the light was. It is obvious that the pit of fruit has influence on the distribution of forward transmission light and backward scattered light, which obtain the result that distribution of transverse or longitudinal often conform to the Gaussian distribution.And it can be determined preliminary that the function of pit in the transmission spectra analysis is to weak the incident light signal, and the existence of the pit can reduce the transmission spectra of the signal strength. Fruit internal organization of light is affected by the existence of pit, the experiment results from the optical point for the use of laser image method provided reference to realize the nondestructive detection of fruit internal quality.The second experiment was used to study the relationship between gray value and sugar content. In this paper, strong and weak incident light was used to collect back scattering light, then conduct model with multiple linear regression method. In the end, because of the relationship among depth of incident light, sugar content and incident light, the model of average gray value is much better than others, whose R=0.854566, SPE=0.0044. Compared with total gray of strong incident light, whose R=0.933870, SPE=0.0042,which makes less progress. It is likely that due to strong incident light, useful information of peach internal quality can be lost. The preliminary model used multiple linear regression method, which will offer reliable reference for studying further internal quality of fruit.
