| Chinese yellow sand soft-shelled turtle is a local variety of Guangxi province. With the increase of its demands; breed production of the turtles increase substantially. Now the divisions of turtles'quality are based on size and feeding time, lack of a method or system of evaluating meat quality and nutritional value which can be accepted by producers and consumers. In this paper, breeding yellow sand turtle, breeding Trionyx sinensis and wild yellow sand turtle were chosen as the research objects, the content of turtle muscle crude protein, moisture, crude fat, ash, IMP (inosinc acid), taurine, EPA and DHA were detected according to HPLC and some other conventional methods. There were conclusions as followed:( 1 ) Comparison analysis of organization:Shell ratio: breeding yellow sand turtle (89.96%) > wild yellow sand turtle (88.45%) > breeding Trionyx sinensis (87.06%); Viscera-body ratio: breeding yellow sand turtle (11.40%) < wild yellow sand turtle (11.56%) < breeding Trionyx sinensis (12.95 %); Liver-body ratio: breeding yellow sand turtle (3.07%) < wild yellow sand turtle (3.27% ) < breeding Trionyx sinensis (3.89%); It shows that breeding yellow sand turtle can provide most edible tissue in the three turtles. Meat ratio: wild yellow sand turtle (55.89%) > breeding yellow sand turtle (52.82%) > breeding Trionyx sinensis (55.49%), the data indicate that the meat ratio of breeding yellow sand turtle is more than that of breeding Trionyx sinensis.( 2 ) Analysis of the main nutritional component:The content of crude protein, moisture, crude ash and crude fat of breeding yellow sand turtle were 21.13%, 75.35%, 1.07%, 0.98%; for breeding Trionyx sinensis , the contents were 20.95%, 75.75%, 0.88%, 1.27% in turn; wild yellow sand turtle (22.48%, 80.92%, 1.13%, 0.65%). There were different contents of crude protein, moisture, crude ash and crude fat in the muscle of the three turtles. According to the comparison, breeding yellow sand turtle is a kind of turtle with high-protein and low-fat.( 3 ) Analysis of amino acid:There were abound amino acid in the turtle muscle. According to the comparison, total amino acid, essential amino acid and fresh amino acid of breeding yellow sand turtle were 20.11%, 8.13% and 7.59%; the three indicators were more than breeding Trionyx sinensis (18.92%, 7.69% and 7.12%). The amino acid grades, chemical grades and essential amino acid index were all ideal; the results show that turtle meat has high nutritional value; it is a major source of food protein.( 4 ) Analysis of IMP, taurine, DHA and EPA: Content of IMP in turtle muscle: breeding yellow sand turtle (1.98mg/g), wild yellow sand turtle (2.31mg/g), breeding Trionyx sinensis (1.49mg/g); Taurine: breeding yellow sand turtle (2.52mg/g), wild yellow sand turtle (3.15mg/g), breeding Trionyx sinensis (2.05mg/g); DHA and EPA: breeding yellow sand turtle (5.6%, 6.3%), wild yellow sand turtle (7.5%, 8.4%), breeding Trionyx sinensis (4.8%, 5.6%). These nutritional components of breeding yellow sand turtle were more than breeding Trionyx sinensis, but a little less than wild yellow sand turtle according to the comparison. |
