Salted potherb mustard of ningbo is delicious and faint scent. It is the residents of table, which can be fired, cooking, roasted, stew, steam, mixed and so on. Pickled potherb mustard is famous local specialties of Ningbo. Potherb mustard as a vegetable, in the curing process itself will produce the nitrite, if processed properly preserved, it will produce high concentrations of nitrite, which produce carcinogenic effects on the human body. In 2008, the Ministry of Health revised the use of health standards for sulfite. For salted vegetables, sulfur dioxide, sulfites and other additives, the use of the provisions of the changes that would previously not within the salted vegetables to add category sulfite additives was changed to allow a limited use, and provides for the use of the maximum allowable volume is 50mg/kg (in terms of sulfur dioxide). But the government departments in routine checking found that a considerable part of the small workshop production of salted potherb mustard existence of sulfite over-standard. So it is extremely necessary to search for salted vegetables nitrite and sulfite rapid detection technology.In this paper, the local potherb mustard salted vegetables, is the research object, and the paper mainly study the four aspects, which is the impact of the sulfite on this potherb mustard salted process, the changes of the nitrite in the potherb mustard pickling process, nitrite method of rapid detection and sub - sulfate method of rapid detection. Conclusion of the study, on the one hand can help plants improve the processing technology, control product quality, on the other hand for the company's quality control, government departments regulation provides a new way. This paper studies are:The first is the sulfites on the impact of local salted potherb mustard. By adding different concentrations of sodium sulfite in the potherb mustard pickling process, we found that the antibacterial effect of low sodium sulfite doses was not obvious, when the sulfite concentration is higher than 50 mg / kg, the antibacterial effect of increasingly evident. Also found that adding sodium sulfite, you can speed up the potherb mustard color changes from green to golden yellow, prompting the color mature. Under normal circumstances, the color will take 40 days to mature, but when you add 50mg/kg, maturity of the color only 30 days, adding a large quantity, the time can be advanced.The second is the nitrite changes of the local potherb mustard pickling process. Under the different salinities and different temperatures and adding anti-oxidants, measured the contents of the nitrite in potherb mustard pickling process, drew curves of different levels. Found that low salinity, high temperature and add the appropriate anti-oxidants could reduce the nitrite content in the potherb mustard pickling process.Third, this study to detect nitrite content in real estate potherb mustard quick way, and made the corresponding detection reagents A, B. This method can be adopted by spectrophotometer, or colorimetric cards to obtain test results. Through the spectrophotometer, the method recovery of 94% ~ 104%, and the test results with the national standards are basically the same assay. Whole detection time is less than 30min. Using the colorimetric cards, 20mg/kg showed purple at the national limit, so that samples can quickly determine whether the excessive, full detection time is less than 20min. Rapid detection of nitrite in pickled potherb mustard method can effectively shorten the detection time, this method is not professional and technical requirements, to meet the need for rapid detection of the scene.At last, through the improvement of formaldehyde - Vice Rose aniline hydrochloride colorimetry, this paper studied the rapid detected method of sulfites in pickled potherb mustard, and made the corresponding detection reagents A, B. This method can be adopted by spectrophotometer, or colorimetric cards to obtain test results. Through the spectrophotometer, the method recovery of 94% ~ 102%, and the test results with the national standards are basically the same assay. Whole detection time is less than 30min. Using the colorimetric cards, 50mg/kg showed lavender at the national limit, so that samples can quickly determine whether the excessive, full detection time is less than 20min. This method can meet the need for rapid detection of the site.
