Problems such as senescence and nutrition loss are easy to arising in postharvest winter Moso bamboo shoots, which reduce its quality and commercial value. In this paper, the storage characteristics of winter Moso bamboo shoots were researched and conducted as follows:1. Research on postharvest storage property of winter Moso bamboo shootsThe content changes of malonaldehyde, relative conductivity, respiratory intensity, PAL activity, crude fibers content, total sugar content, Vc content and weight-loss ratio were adopted as evaluating indicators. The effects of differential pressure humidicool preservation technology on the storage quality of winter Moso bamboo shoots were carried out and made contrasts with common cold fresh. The results demonstrated that differential pressure humidicool preservation can effectively improve the storage characteristics of winter Moso bamboo shoots.2.Research on different storage conditions affect differential pressure humidicoolpreservation effects of winter Moso bamboo shoots The effects of -1℃, 2℃, 5℃storage temperature conditions on the preservation of winter Moso bamboo shoots were carried out. Experiments showed that 2℃condition more conducive to the storage of winter Moso bamboo shoots; The effects of 50Pa, 100Pa, 150Pa storage pressure conditions on the preservation of winter Moso bamboo shoots were carried out. Experiments showed that 100 Pa pressure difference condition more conducive to the storage of winter Moso bamboo shoots; The effects of 80%, 90%and 98% humidity conditions on the preservation of winter Moso bamboo shoots were carried out. Experiments showed that humidity 90% condition more conducive to the storage of winter Moso bamboo shoots.3.Optimization of preservation parameterThe evaluating indicators were adopted as crude fibers content and weight-loss ratio of 30d storaged winter Moso bamboo shoots, introduced duplicate orthogonal gyration combination design to obtain data for regression model. The relationship between crude fiber content, weight-loss ratio and temperature, pressure difference, humidity were studied. The impacts of technological parameters on the preservation of bamboo shoots were analyzed. Following optimal operation conditions were found through differential pressure humidicool preservation process on winter Moso bamboo shots: temperature 1.9℃, pressure difference 85Pa, humidity 92% in storage.
