In this paper we summarized the research progress of viscosity behavior of polymer dilute solution and conformation of gelatin. Viscosity of gelatin solutions with concentrations between 10-4 and 10-5g/cm3 and different solution system were studied systematically via a high-precision photoelectric viscometer, covering the extremely dilute zones. Our main findings are as follows:The flow time of gelatin at different system was determined, getting the standard deviation of the flow time, the results showed that: gelatin solution was unstable in the concentration of dilute and extremely dilute range at 15.0℃. This may be due to coil-helix transformation of gelatin molecules resulting by electrostatic interactions between charged amino acids, hydrophobic interactions and hydrogen bonding between peptide bonds.
