The sludge samples obtained 28 were separated from the Lotus plant old pit, the new pit in the pit wall, pit bottom, and sludge of baimaiquan Company。determination of 11 strains isolated from acid bacteria through observation of the microscope and qualitative analysis.After second screening, has produced acid content determination to elect the highest acid producing strains have been 5-5. The output of acid had reached 550 mg/100mL.The subject to domesticated strains of selected and then to pure culture. The finalized optimal result are as follows:pH6, alcohol concentration of 2%, 80℃heat treatment, culture temperature is 30℃,inoculum is 4%, culture time is 6d. Selected glucose as the carbon source ,Select L-tyrosine as a nitrogen source ,and appropriate to add trace elements. To research the capacity of acid bacteria, selection of glucose as the carbon source, add content was 1.5%; select L-tyrosine as a nitrogen source, determine the dosage was 0.1%. The study also showed that, addition of trace elements can contribute to produce acid. When the trace elements added 0.1%, the per 100mL of fermentation acid content has been up to 778mg.Use the caproic acid bacteria which this topic filtered to preparat of organic acid artificial cellar mud, and by the analysis of the fermented of the production of its 1 to 4 which the bottom row of wine big slag mixed liquor samples and two separate micro-wine component.The test data showed that the production of semi-finished wine is basically the content of ethyl caproate showed an increasing trend by row, the content and proportion of the trace elements was suitable, by sensory evaluation, the quality reaching Grade II.
