The Lactic acid bacteria (LAB) were isolated from 3 samples of koumiss from Xilinguole in Inner Mongolia, and were identified by the traditional and molecular identification. The fastness to acid and salt were detected by uv spectrophotometry, and the antifungal activity was studied by short horizontal lines.The Results were as follows:(1) The 67 strains of LAB contained rods and no cocci was isolated. 7 strains of Lb. coryniformi subsp. Torquens, 11 strains of Lb. delbrueckii subsp. delbrueckii, 5 strains of Lb. bifermentans, 8 strains of Lb. amylophilus, 24 strains of Lb. helveticus, and 12 strains of Lb. delbrueckii subsp. bulgarcus were identified.(2) Though the detection of antifungal activity, fastness to acid and salt, the strains were good in salt and acid fastness: 1 strains of Lb. coryniformis subsp. Torquens, 4 strains of Lb. helueticus, and 3 strains of LAB have broader antifungal activity on 5 strains of the fungus. 11 strains of LAB have broader antifungal activity on 4 strains of the fungus, and 1 strains of LAB have broader antifungal activity on 3 strains of the fungus. Specially, 1 strains of Lb. delbrueckii subsp.delbrueckii and 6 strains of Lb. helueticus had the stronger antifungal activity to Fusarium oxysporum f. sp. Cucumerinum JCM9284 than others.(3) The 11 strains of LAB which had the broader antifungal activity were identified. Compared with the standard strains sequences, they were all identified as Lb. helueticus.(4) In conclusion, 4 strains of Lb. helueticus and 1 strains of Lb. coryniformis subsp. Torquens were obtained which had broader antifungal activity and were good at salt and acid fastness.
