Flaxseed gum is a kind of polysaccharide-based natural plant polymer rubber, containing a small amount of protein and mineral elements. Because of its viscosity, emulsification, foaming, water holding capacity and other features, it was widely used in food, oil drilling, cosmetic chemical, pharmaceutical and other industries. Flaxseed gum rubber extraction process is an important prerequisite for its development and utility, because this process can provide fundamentals for development and utilization of flaxseed gum.In this paper, flaxseed was taken as raw material and water as extraction solvent.The influencs of extraction temperature, extraction time and solvent volume on the yield of flaxseed gum were investigated and the best values of these factors were obtained. The results showed that the optimal solvent volume was 16, the best extraction temperature was 80℃and the optimum extraction time was 5h under the experimental conditions.On the basis of single-factor tests, the quadratic regression orthogonal rotation experiments were introduced to study the influences of solvent volume, extraction temperature and extraction time on the yield of flaxseed gum. The law of influences of various process parameters on the yield of flaxseed gum was established and a regression model was obtained to analyze the factors and the interaction of primary and secondary. By statistical optimization, the optimum parameters and the highest yield under the experimental conditions were determined. By means of main effects analysis on the regression equation, the results obtained in sequence as follows: solvent volume, extraction time, extraction temperature; the interaction analysis showed that: the sequence of interactions of solvent volume ( z1 ), extraction temperature ( z 2) and extraction time ( z 3) was: z 2z3> z1 z3> z1 z2. Through statistical optimization could determine the best combination was: solvent volume was 16.55, the extraction temperature was 83.49℃, extraction time of 5.87h, at this circumstance the flaxseed gum recovery could get the highest rate 9.49%.Air spray drying equipment was employed in drying of flaxseed gum. The spray volume, medium temperature, medium flow and other parameters on the moisture content of flax gum and viscosity were investigated. In this experiment, the best values under the experimental conditions were: spray volume was 700mL / h, the best drying medium temperature is 200℃, the best medium flow rate of 80m3 / h.By quadratic regression orthogonal rotation test, two regression equations which reflect the relationship between the moisture content and viscosity of flaxseed gum and spray volume, medium temperature and medium flow of spray-drying were established, and on this basis, the factors which impact the flaxseed gum yield and viscosity and the interaction of primary and secondary of the factors were analysed. The results showed that spray volume, medium temperature and medium flow moisture were the factors which affect the moisture content of the flaxseed gum; variance analysis showed that the interactions between spray volume, medium temperature and medium flow of three factors are all not significant. Viscosity tests showed that the order of factors influencing the viscosity of flaxseed gum was: medium temperature, medium flow, spray volume; the sequence of interactions of spray volume ( z1 ), medium temperature ( z 2) and medium flow ( z 3) was: z 2z3> z1 z3, the other interactions were not significant.
