| It was reported that lots of grain and food were polluted by microbe every year in China, It not only has extremely detrimental to human health, but also caused great economic losses,Adding chemical preservatives or natural preservative were an important method to prevent the growth of microorganism. However, studies reveal that these chemical preservatives may lead to some problems inducing carcinogenic effect.as result,the food Scientist turned the focuses to the exploitation of natural preservatives.This study had studied the antimicrobial action and antibacterial mechanism of Litsea cubeba oil,the Litsea cubeba oil was used in the jam based on the results of the antimicrobial experiment.This study could provide theoretical basis for the further development of Litsea cubeba oil.In this paper, The anti-microbial activity of Litsea cubeba oil was studied,and the effect of water activity on anti-microbial activity of Litsea cubeba oil was studied at the first time. The antibacterial mechanism of bacterial was olso studied.it was applied to the low sugar complex jam of orange peel and carrot based on the result of the inhition experiment of Litsea cubeba oil.The results are shown as follows:(1)The Litsea cubeba oil has consideration anti-microbial activity to three species of bacteria,five species of mould and two species of yeast. The result showed that the Litsea cubeba oil have different degrees of inhibition on the test strains,the Litsea cubeba oil had the best inhibitory effect on mould, the effect on yeast is also very good,and finally, on the inhibition of bacteria by Litsea cubeba oil was little worse.the diameter of inhibition zone were small at the concentration of 1% and 2%, When the concentration of more than 2%, the inhibition zone diameter increased rapidly.(2) the antibacterial effect of the Litsea cubeba oil had the relationshop with the pH,and it has the more obvious inhibitory effect in acidic conditions; it had the best antibacterial effect when the pH5.5-6.5. the temperature had little effect on the antibacterial effect of Litsea cubeba oil,the Litsea cubeba oil had stability below the temperature of 120℃. there are synergistic antibacterial effect of between Litsea cubeba oil and a certain concentration of salt and sugar,it had good antibacterial effect When the NaCl concentration from 0 to 2%; (3) the inhibitory effect of the Litsea cubeba oil on bacteria, mould, yeast were increased with the increase of time when the concentration was 5%, the inhibitory effect of the litsea cubeba oil on bacteria, molds, yeast were increased with the increase of concentration under the same time, the antimicrobial activity of the Litsea cubeba was increased with the increase of oil concentration and time.(4)the trend for the MIC of the Litsea cubeba on test microorganism was molds< yeast2+, K+ and Mg2+ concentration increased significantly, pheasant pepper oil to increase the permeability of bacterial cells;The Litsea cubeba oil also had a strong inhibitory effect on bacteria and yeast in a sealed container in the form of gas mixture without the direct contact with the bacteria; the cell structure were damaged under the electron microscope.(7) the low sugar complex jam of orange peel and carrot marmalade recipe was identified through multi-factor test on the basis of the studies of various factors,the marmalade recipe was:orange peel sauce; carrot sauce=50:50,15% of the amount of sugar,0.4% the amount of zymogens, litsea cubeba oil concentration of 0.3%. And the relation between storage temperature and sterilization methods and the low sugar complex jam of orange peel and carrot corrosion resistance were studied:it was showed that it had more conducive to preservation of the low sugar complex jam of orange peel and carrot at the low storage temperature. the total number of bacteria of pasteurization group was significantly lower than the boiling water sterilization group; it was found that the Listea cubeca oil had a significantly delayed effect in the changes on the contents of vitamin C of the low sugar complex jam of orange peel and carrot.The anti-microbial activity of Litsea cubeba oil was studied,and the effect of water activity on anti-microbial activity of Litsea cubeba oil was studied at the first time. The antibacterial mechanism of bacterial was olso studied.it was applied to the low sugar complex jam of orange peel and carrot.From what we have studied above,we can draw a conclusion that the Litsea cubeba oil is natural Bacteriostatic agent,it has good antibacterial activity,and olso it can be used in food industry. |
